Our Tonnellerie series is the perfect showcase of our "wildly traditional bière". French for “cooperage”, each beer in the series shares one core trait: they were all fermented in oak. Beyond that, the recipes and styles are as unique as the cues they take from nature. Quadrupel Tonnellerie, a sour and funky barrel-fermented Belgian-style quadrupel with blackberries, is no exception. A style known for being at the more malty, complex and rich end of the Belgian strong ale spectrum, this quad revels in layers of dark fruit and figgy flavors, and complimentary undercurrents of oak. The natural esters from the Belgian yeast compliment the rustic, earthy and wild qualities derived from the barrels and nature - plus the piquant flavors from the fruit - for a dynamic flavor profile and mouthfeel that will evolve over time.

Belgian-Style Quadrupel

I have heard mixed reviews about this beer. I am expecting a souring component to it because it is from Terreux. I love great quads; however, I have not consumed anything close to good lately. The beer is 52 degrees and served in a chalice glass. A nice hiss emitted from prying off the cap. The pour created a frothy and airy two-fingered light tan head with good retention. Lacing was left on the glass as it slowly dissipated. The color of the beer is SRM 30, dark rusty brown with ruby hues. The appearance of the beer is beautiful.
Rich toffee, caramel, and blackberries come to life. Nosing further, I detect a hint of horse blanket, figs, toasted malts, earthiness, bready, oaky, floral, and raisins. The aromas are dominated by malts, a touch of funk, and some yeasty notes.
It gets funkier on the taste; barnyard, oak, and horse blanket. The heavy malt presence from the aromas is not on display here. Caramel, toasted malts, toffee, floral, raisins, hint of herbal, some tobacco, and a berry note.
The mouthfeel is creamy, smooth, and gentle. The body is medium, has a low carbonation, and lasting finish.
I am torn by this beer. It does not present as a quad; but more as a funky sour with a heavier malt present. The beer is awesome and has aged well, with no oxidation. How to rate it. If you read this review, just know that this beer is a tasty wild ale and not a quad. If you enjoy sours, commit yourself to drinking them.

Ruby-colored pour, little apparent head. Dark fruit and fig flavors, with oaky undertones. I'm always appreciative of a sour that walks up to the tart line, but doesn't cross it. Very smooth and blended, a 2016 vintage consumed in early 2021.

Bruery Terreux Quadrupel Tonnellerie body is an opaque very dark brown with red highlights. A less than 1/2-finger tan head was formed that dissipated very quickly and left no lacing. The nose is dominated by sour cherry, dark fruit [blackberries, figs] and funk. The taste matches the nose however, is stronger. The sour and funky flavor builds as you consume the ale. The Ale is high-medium bodied with a dry and sour finish. Carbonation is to the lower end.

Tonnellerie to me is more of a Wild/Sour Ale than a Belgian Quad. A Quad is rich, malty and sweet on the palate - not sour like Tonnellerie. If you like sour ales you will like this ale. I am not a fan of the Sour Ales and my ratings will show it.

All around great beer, but it did not age as well as it could have (store most likely did not cellar it well).

Pours a very dark brown with purple hues throughout

Smells and taste like ripe dark berries, acidic, some oak barrel and figs.

Mouthfeel is smooth and creamy, a bit acidic.

Tart but not overly tart.

Dark brown in color with reddish, ruby hues. Medium low clarity, short lived off-white/light tan head that quickly dissipates.

Blackberry, black cherry, currant, oak, burnt sugar, some oxidation, floral aroma from the hops but the hops have faded.

Flavor is tart, blackberry, sour cherries, oak, perhaps some funk, currant, dark fruit and oxidation. Low floral hop bitterness, some sweetness but mainly tart

Puckering sensation but not astringent, full bodied, medium high carbonation, noticeable alcohol warmth but does not ruin the beer.

This beer was not cellared properly and the oxidized characteristics have overtaken all the other flavors, but has not ruined the beer. This is still an enjoyable beer but at four years old it leaves much to be desired

750 ml bottle, 2016 vintage, looks like the bottle date says 05/16/16 but it's hard to read. Label says 10.2% ABV. Served in a St. Bernardus chalice, the beer pours a very dark brown color with about a half inch tan head. Head retention and lacing are both decent enough. Lots of dark fruit/blackberry in the aroma, along with some oak, funk, cherry and caramel. I think the taste is pretty much like the aroma, dominated by the dark fruit/blackberry but with the other flavors still noticeable. There's also a good amount of tart berry flavor in this brew. Mouthfeel/body is medium/full, it's coating and smooth with a moderate amount of carbonation. Didn't have this fresh, but this has certainly aged well! Bought it on closeout last year for $3.99 a bottle, great deal!

A: Poured into a Duvel tulip to a deep brown beer which is essentially black. The beer is topped by a dense and rocky finger and a half of light tan head which fades slowly to a collar around the edge of the glass with minimal lacing
S: Smells of sour cherries, leather, funk, blackberries, and oak.
T: Taste is slightly roasty with some caramel, blackberries, sour cherry flavor builds, leather and funk are there as well along with a touch of oak. On the swallow there's more sourness, blackberries, funk, leather, caramel, and roasted malts with a hint of bitter dark chocolate.
M: This beer has a slightly syrupy feel on the palate with a body on the upper side of medium. Carbonation is on the low end but adequate while the beer has a semi-dry finish. It's like it wants to finish dry but there's too much residual sugar to allow it.
O: Overall this is an interesting beer. It isn't the most true to style but it has interesting flavors and a good amount of complexity. It's worth a try if you can find it but it isn't what you want if you want a straight shooter of a quad.

Large bottle, bought in Wendover, Nevada on a whim. Wow, what a mistake. The smell was the first warning -strong fruit, especially plumbs. Wife sitting next me wondered why I was drinking aftershave. Kid walked in later and said, "I can smell that. It smells like death". Taste was very sour, strong over ripe fruit, just excessively sour and overwhelming cheap wine flavors. Mouthfeel was moderate. Appearance had ambition, it was a clever but unnecessary fake, like Wayne Gretzky on a drunk goalie. That didn't come out right. Anyways, very dark and hints of lacing. I think someone may have tried to homebrew using a cheap red gallo wine instead of malt. I won't finish the glass, will dump the rest and likely the other bottle as well. This is not beer !
