Wit The FunkWit The Funk
Notes: We make Wit The Funk with tradition in mind. Brewed with orange peel and coriander and fermented with wit yeast, brettanomyces, and our Terreux house mixed culture. Aged in oak foeders until final maturation, the result is a complex beer that's tart, funky, oaky, citrusy, and super drinkable. Sure, it takes longer, but WTF? It's worth it.

Canned 14/2/20 (stored @ room temp.)
This beer, as is apparent vis-a-vis packaging, is not meant to be your über-refined barrel aged sour. It's your daily drinker, it's the accessible sour you find in the craft beer section at your local grocer, it's a beer you find on draft at the bar that carries some craft stuff from time to time. You say, sure, I'll take that.
But then you get it in your glass, get a nose of it, take your first sip.
And you're gobsmacked that you didn't wait in a line or fork over $30/bottle for it. Or maybe not, maybe if you have tons of barrel aged sours in your area maybe you just react like me. You think, this is a seriously good, tart--no, sour--but not offensive, funky-clean, bright, crisp beer. One that we all dreamed about in 2012--a daily drinking barrel aged sour that doesn't break the bank, if only we lived in Brussels...--that goes for ~$12/4-pack.

Slightly hazy golden color, coarse white head that instantly disappears. Aroma of lemon, apples, hay & mild funk. Taste is tart, slightly sour. Flavor: lemon, apple, yeast funk with hint of oak at the finish. Thin, well carbonated. Mouthwatering delicious & thirst quenching.

16oz can served in a big snifter. Dated 3/27/19.

Pours hazy bright yellow-orange with a biggish head that fades pretty fast. Smell is funk and fruit.

Taste is funk, slight banana and apple fruitiness, and a pretty strong bitterness. Plus something grainy or biscuity. And a citrus tartness.

Mouthfeel is medium and surprisingly still. Overall, not bad.

Pours orangish a little hazy. No head at all!
Small is a little lemony funk and a touch of coriander or clove (similar to a wit). Flavor is mostly funk and some tart. Pretty thin - makes it very drinkable. I could enjoy these on a hot day.
Pretty good beer overall.

This is a nice clean sour with a touch of funk. Belgian wit beer it is not, so just wanted to give fair warning to others if that is what you were thinking this beer was going to be. Classified on Beer Advocate as American WIld Ale and that is 100% correct classification. Enjoy, its a good one.

16 ounce can into tulip glass, canned on 1/29/2019. Pours moderately hazy medium golden yellow color with a 1 finger fairly dense and fluffy white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, pineapple, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, spices; moderate pale/wheat malts, and oak notes; with great strength. Taste of big tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, pineapple, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate lactic tart/sourness, Brett tang, and yeast/coriander/oak spiciness on the finish. Lingering notes of tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, pineapple, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread, leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/acidic yeast, spices; moderate pale/wheat malts, and oak flavors; with an awesome malt/tart/tang/sourness, and yeast/oak spiciness balance; with no puckering/astringent flavors after the the finish. Light-moderate increasing dryness from lingering tart/sourness, Brett tang, and yeast/oak spiciness after the finish. Medium-plus carbonation and light-medium body; with a very smooth, moderately creamy/grainy/acidic/tangy, and fairly crisp/sticky/tannic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 5.4%. Overall this is an outstanding sour witbier. All around awesome complexity, robustness, and balance of fruity/funky/acidic yeast, spices; moderate pale/wheat malts, and oak flavors; very smooth and fairly crisp/refreshing to drink with the modestly acidic/tangy/tannic/drying finish, not overly lactic. Very flavorful and not watery for the ABV. Fantastically well rounded Brett, Bacteria, Witbier yeast complexity, with balanced spices; nice pale/wheat malt backbone against acidity, and overall oak foeder presence. A highly enjoyable offering, and very impressive style example as expected.

Canned 3/27/19, thank you to Craft Beer Kings for scoring me this one

Hazy orange with a finger of loose white head, fades rather quickly

The smell suggests a funky sourness with notes of orange, mango, lemon, and pine, which all together smells inviting

Wow, it was more sour than the nose would suggest. Very brett forward with orange and lemon right behind, this tastes amazing. I wasn’t sure if I would pick up the notes of oak, but they come in the back end of the sip with a mild earthy hop flavor without any bitterness

The mouthfeel on this is very dry which works in its favor, leaving just a pleasantly tart aftertaste

Overall an interesting brew with the hybrid of a wild ale and a witbier, I haven’t had anything very similar, and I’m loving the minor oak flavor. This is a very refreshing beer and I could definitely see myself getting more

16 oz can dated 1/29/19
Mini Nonic

Blonde color with a thin head of 1 finger, receding to a wispy ring.

Aromas of oak, clove, tart tangerine, vinegar, and must.

Wow! That's sour. Wasn't expecting that. Has some nice complex notes though, some orange and tangerine, browned apple, coriander, wet oak, red delicious apple, and sour orange gummy. The oak notes in this are impressive...deep, saturated, aged.

Feel is tannic and dry with some crispness, dryness like a cider, and woodiness.

Overall an impressive beer regardless of the type. I wasn't in the mood for something this sour, even, so for me to rate it like this says a lot about it.

Highly carbonated yellow colored beer with a small white colored head.

Smells sour. Sour fruit mostly apple. Distinct Barnyard scent of Brettanomyces. But mostly is is sour.

Starts out sour. Lesser tastes of caramel and pineapple. Sour pineapple caramel describes the taste fully.

Mouthfeel is average.

Overall it is a sour pineapple caramel beer. If that appeals to you buy it. Not going to be buying a second one.
