Cognac Sleeping Forever is our anniversary imperial stout aged in French cognac barrels for over a year. Honey covered dates, sweet dark cherries, Heath Bar, and warm chocolate syrup. Extremely complex, velvety, elegant, and drinkable.

The beer pours a nice brown foamy head that doesn't really dissipate while the beer itself has a nice syrupy texture to it and a dark chocolate black the looks nice. The smell is powerfully sweet and the cognac really dominates everything. The chocolate notes and a light vanilla barely come out in the finish. The taste suffers the same fate as the smell with a strong cognac but has weakened a little bit. The dark chocolate comes out more with a bitter note and the vanilla comes out as well to make this a more interesting beer. The feel is good. It has very little carbonation to it and has a thicker and more syrupy texture to its heavier body. This is definitely one of their more indulgent beers that is best suited for the winter.

Even though I got to try the stupid ridiculous double vanilla version, this cognac one takes the cake for me. The chocolaty dark roast gets a bruleed brown sugar oatmeal crust character to it from the barrel, as well as a touch of sweet vanilla in this still rather thick bodied stout.
