Notes: American lager intentionally brewed in Berliner Weisse fashion. Fermented with lager yeast, lactobacillus, and Brettanomyces. Aged in an old cypress foudre.

Pale pastel golden orange. Thin edge of frothy foam, slow rising carb.
Bretty oaky aroma, wet wood, wet hay, dried apple.
Tangy taste, slightly cheesy. Cheese rind, tart crisp apple. Funky Brett.
Light bodied and effervescent, it's a nice wild Berliner, not sure there's much defining character besides the Brett yeast.

Pours a cloudy pale yellow with a very bubbly, fast fading head that leaves a bit of spotty lacing.
The aroma is fruity and slightly funky with a hint of spice. Green apple, lemon, a hint of hay and a touch of pepper. A touch winey.
Taste is tart green apple up front followed by a bit of barnyard funk and hay with a hint of citrus. A bit of a sweet, ripe fruit aftertaste.
Mouthfeel is bubbly, somewhat dry and refreshing.
Overall, a simply outstanding beer that goes down easy and is quite refreshing. Lovely stuff.

750ml bottle, sample from the brewery.

Sounding pop of the cork, pretty lively. Clear pale yellow straw hue, dregs left in bottle. Funky tart nose with lemon zest, cedar, and musty cellar. Deep crispness, light fluffy dry body. Even funk from start to finish, cedar adds to the complex and unique flavors that the wild things are adding to this brew. Perfect level of tartness, ridiculously drinkable.

Cabin Stop - Hayward, WI

Schell always does a great job with their 750s. Cool bottles, classy labeling, and even a snazzy little neck tag. A pop of the cork brings gunsmoke. The pour is goldenrod with a slight haze running throughout. Carbonation bursts upward from all over the bottom of the glass and keeps the crackly white head bolstered. It's a fine looking beverage indeed.

The nose is soft, interesting, fruity, and appetizing. The malt base is crisp and clean, super clean. A touch of graininess comes forward with a soft sweetness. The highlight of the nose is the veritable fruit salad. It starts off in a melon patch with honeydew and cantaloupe before segueing into the orchard with white peaches. Ghost like minerality runs throughout and adds depth. Light herbal wildness joins the fray as well. Delicate wood rounds it all out. Really good shit!

This is a delicious beer, though not quite as nuanced as the nose led me to believe. An easy going melon sweetness plays nicely with the peach, white. The minerality is slightly more pronounced and comes across as wet stone. The herbalness is softened and the faint woodiness comes in on the swallow at the far backend. Bueno, muy.

The body is light with a zesty carbonation that tickles the tongue. A tartness and dry tannic quality hits along the gums and lingers long after each drink. The finish is dry, but not bone. The drinkability is off the charts up there. It's a highly quenchable beverine.

Cypress Blanc is a damn good beer and up there close if not equal to my favorite of the series, Star of the North. This beer showcases a masterful use of wild yeasties to bring across amazing flavor profiles. Not only that but the carbonation is dialed in as well, a very important aspect of a beer like this. I wouldn't hesitate for a second on picking up more of these. Very good!

750ml corked and caged bottle into a snifter. The brew appears a clear pale yellow color with perfect clarity and a white head.

It smells juicy with white grapes and some slight sulfur. This tastes like white grape juice mixed with a bit of sulfur and some cereal-like wheat grains but hardly sweet.

This is light in body and modestly carbonated. Honestly, this is an exquisite example of dry hopping gone right. Id love to have this again.

creative and delicious beer. the few i have had from this berliner project have been astoundingly good. never really had a berliner lager before, i love the concept. a sour mash i assume, followed by patient lagering and then hanging out in wood with critters. its milky white yellow in color, with a good head that fades fast. looks very thick, with tons of yeast in suspension, but not big enough to see chunks or anything. the nose is very sour, i get lacto and limes in here, and hints of lemon rind with the wood, which is really prominent. the fact that its a lager is not readily attainable from the nose, since the brett and lacto are far more evident. there is so much going on in this brew, with the wood and the acid being the most prominent. i dont know much about cypress wood, but i do know that i love what it does to this. crazy citrus popping off in here, and the dry finish shows lager, biscuits and funk. carbonated very well, and quite delicate despite being as thick and yeasty as it is. the berliner aspect is there, thats still definitely the base style, but its dressed up splendidly without being muddled. what we can do with lagers is only just starting to roll, and i cant wait to see what evolves. this is so good.

Poured from a 750ml bottle into a snifter.

Pours a dull light orange body with a fizzy white head that reduces super quick within a minute to leave no lacing or retention.

Aromas are awesome, tart lactic and citrus, funk and woody oak. On the tongue it's a little muted and not as sour as the aroma leads you to believe, lightly tart, Apple and citrus with a grassy hoppy background. Mouthfeel is easy drinking and crisp, medium high carbonation. Dry and somewhat watery.

Overall decent, wish there was a little more flavor but the aroma is fantastic.

poured 750ml bottle into Teku.

A - Soft pale yellow with a 1.5 fizzy white head. Quickly fades into a wisp of thin bubbles on the edge of glass. No lacing, but it is very humid today.

S - The citrus and lemon acidity jump out right away with floral hops. Some funky wheat, grain and Brett along with notes of oak and musty white grapes.

F - Nice lemon tartness on the front and doesn't become too vinegary. A wheat funk with some grainy notes and musty grapes. I can taste the Berliner base, but the Brett gives it other flavors that work well together.

M - Light and refreshing with lively carbonation and a body. A nice tart dry finish.

O - This series has been fantastic and this one is excellent. Really excited for the Peach version!
