Notes:
Derives from our sour wheat base beer, and was specifically made for our CASA Bottle Membership Club members. The base beer is brewed with equal parts pilsner and wheat malt and is mix-fermented with a blend of Saccharomyces, Brettanomyces, and bacteria before being aged in neutral red wine barrels. Zarzamora is created by transferring the base beer onto hundreds of pounds of locally grown blackberry and then allowing the refermention to occur over several months. The beer expresses itself with a distinct berry flavor, mild funk, prominent tartness and a pronounced wheat backbone.
