the only bottle offering i have had from these guys, and arguably their best, or at least my favorite i have had. brewed in the grisette style, it had me from hello. bright golden pour with a tall expanding bubbly soda sort of head on it, high luster and clean, very active. it smells grainy for being so light, thats what i love about this style. wheat for sure, more than one or two barley malts it seems, and maybe even some corn, it smells sweet like that. the yeast is more belgian than wild, in fact entirely belgian and not wild at all, but really bright and complimentary too, fruity like apricots and green apples, a little more subtle in the flavor. i get a little peppery spice, maybe rye in the grain bill, maybe a flavor of the belgian yeast strain. either way its a neat little wrinkle. sweet grain, i bet there is corn in this. insane carbonation the whole time, literally through the roof, its awesome! this seems to me to be one of the best recipes and with the best execution of anything they make. i was super into this one, and highly recommend picking one up at the brewery. grisettes need to make a comeback!
