This one pours a light yellow-ish color, with a small head, and a good amount of lacing.
This smells like pear, grassiness, lemon, stonefruit, hay, and very light stinky funk.
Like all Suarez beers, this is very subtle and drinkable, and an expression of complex simplicity. It's inviting, making you want to just drink a ton of it, because you can. But it also allows you to look deeper, as there's a surprising amount going on here- pear, green apple, grassy hops and grassy funk, some hay, apricots, and a bucolic light funk.
This is light bodied, kind of like drinking air, with a good level of carbonation.
Dan Suarez is really a wizard. This brewery is making the most exciting beer in NYS at the moment.

Mouthfeel is very nice. Light and crisp. Semidry finish.
Overall: This reminds me alot of Hill Farmstead Flora. This beer easily exceeded expectations.

L: Clear pale golden pour with several fingers of fluffy white head. Great retention/lacing.
S: Tart and fruity... a bit of funk.
T/F: Light grains and tart fruit with some sweetness making its way through. Lemon citrus, oak, and chardonnay... light funk... green apple peel, and faint vanilla. A mineral quality towards the finish. Light bodied... super drinkable and with delicate carbonation.
O: An outstanding and super drinkable brew... and at 4.3% it's good for just about any occasion. Complex and delicious.

The aroma offers musty earthy ponds, grass, hints of sweet citrus rind.
The flavor follows with light acidity of Meyer lemon, a musty more touches of light funk, a wonderful floral mushroomy quality comes through with a light crackery and a hint of oak drying. Bright and lively carbonation drives the beer through the palate.

750 mL bottle. Pours a clear golden. Smells of soft oak, grain, lemon acidity, and a little bit of grape fruitiness, like a very fruity white wine. Tastes of grain throughout. Lightly tart, again with a touch of lemon and a white wine fruit flavor. Oak permeates and softens the grainy profile. Back end is mineral, almost salty at its peak. Light and crisp. Much more textured than the standard Suarez profile. Delicious.
