Brewed with a healthy amount of foraged staghorn sumac last July, we also added a pinch of tangerine marigold grown by Letterbox Farm Collective. This one has a very unique palate, exhibiting notes of grape skin, orange oil, raspberry, and lemon...so cool.

750ml bottle. Label is hand marked with the date of '1/22'.
Cloudy, pale gold colored body. Slow foam ooze upon opening. One finger of white head; this reduces to an island and a ring. Leaves behind very small spots of lacing.
Aroma has a good level of barnyard funk, along with fruity notes of lemon, lime, peach, pear, raspberry, and citrus.
Taste is more tart than sour, with flavors of lemon, peach, citrus, raspberry, and oak. Funk is more grassy and hay. Light note of mint and pepper.
Medium mouth feel. Very dry finish. Very good carbonation.
Rural feeling beer with depth in the nose and for flavors. I enjoy the raspberry note.

Hazed sunset orange with visibly strong effervescence and a thin finger of off-white head that quickly dissipates into a very thin cap that leaves pretty sheets of lacing.
Pleasant aroma of soft citrus, raspberry and flowers, with a slight yeasty, woody, funky impression behind.
Deliciously delicate lemon, orange, plum skin and raspberry flavors meld into the same very lightly funky wood and yeast impression from the nose, with the addition of some clay or stoneware. Semi-dry, lightly-tart finish.
Relatively thin in the feel with sharp, prickly carbonation.
This is a delightful beer. Harmonious flavors with light enough acidity to keep it very quaffable. Maybe a touch too well carbonated for my preferences, but otherwise really excellent all-around.

750ml capped bottle into a Brooklyn Brewery snifter.
Crystal clear goldenrod color with a frothy white head. Nose is citrus, flower petals, straw, and coriander. Fresh with some zing that tickles the nose. Clean. Beer opens citrus, coriander, and peppery notes. Hints of grass, oak, and straw in the middle. Citrus and a light tartness too. End is foamy with a slight soapiness. Clean aftertaste with some orange rind. Body is light with ample carbonation. Prickly and lively on the palate and goes down crisp, clean, and moderately dry. Super drinkable.
This one is casually awesome. Suarzes just nonchalantly pumping out some of the best saisons in the country.

750 ml bottle into a tulip glass.
Pours a hazy golden straw color with a huge fluffy snowcap of a head. Great retention and lacing.
The aroma brings notes of lemon zest, oranges, green apples, pear, and bready yeast. There's a bit of white wine and funk. Very floral.
The flavor has notes of oranges and pears, with some lemongrass, berries and fresh grapes. A little peppery spice and funk comes before an earthy, oak finish.
The feel is medium bodied with excellent carbonation. Smooth, yet crisp and extremely dry.
Overall, another fantastic farmhouse ale from Suarez Brewing. It's nicely tart on the aroma and the flavor is exploding with complexity.

Bottle was an absolute gusher when I opened it, yet the head on this when poured was thin and very short-lived. The color is glorious. It's an extremely vibrant, mostly clear glowing gold color. Pleasantly unique. Aroma has plenty of traditional saison funk to it with what I suspect must be the sumac providing some notes as well (I have no idea what sumac smells like).
Taste has a really nice combo of traditional saison with herbal notes, light acidity & funk. It's subtle, yet complex. Relatively dry. As with most Suarez beers, it's also crisp & clean. Dude just flat out knows how to brew good beer.

Poured from a bottle (Jul2020) into a 25cl (Suarez!) stein
L: pours a very slightly turbid, slightly orange gold with a fluffy white head that fades after a couple minutes. Leaves great chunky white lacing
S: clean farmhouse nose, lots of lighter citrus aromas with a bit of earthy tartness. Get lemon (bit of zest, some watered-down flesh), a bit of grapefruit/tangerine, some slight fresh bread
T: follows the nose very well, excellent light citrus-forward flavor with a bit of tart and saison complexity. Again get that lemon zest/flesh, sweeter tangerine flavor, some baked bread, bit of earthy tartness along with restrained funk
F: medium carbonation, medium body, lightly drying, very drinkable but found it less thirst quenching/fuller than other Suarez saisons
O: excellent full-flavored beer, easy to drink with solid complexity on both the nose and swallow. Fruit character leads, with less of the sharper lemon I get from Local Boy and other Suarez saisons

Hazy pale pastel yellow with a short white head settling quickly to a fuzzy collar.
Smell seems like it will be more sour than taste turns out to be, which exhibits a combination of herbal and stone fruit notes. The light body has a fluffy effervescence delivering nectarine and strawberry qualities, to my palate, finishing semi-dry and tingly.
This is very refreshingly tasty, with only a faintly woody farmhousey funk to it, pulled back to lighter qualities by a touch of lemonade.

A- 750ml bottle pours into a goblet with a cloudy golden-orange body. The cap on the beer is an inch high with a thick and creamy texture. Decent head retention as a medium ring around the top of the beer leads to spotty lacing.
S- The bugs and critters make up for most of the aroma lending a Saison yeast character, moderate lactic acid and a touch of the funky stuff. Straw, lemon, orange zest, herbs, coriander, slight pear, vinous pale grapes, slight pepper and a touch of Brett cherry.
T- The Saison/Farmhouse ale character of the beer grows here as the Belgian yeast spice picks up some strength balancing out with the other bugs a bit more than in the tart aroma. Has both esters and slight phenolics with pear, apple, vinous pale grape and spicy notes. The lactic acid is light and there is just a touch of acetic as well. Oranges, tangerine, flowers, citrus zest, grape must, coriander, pink pepper and herbal notes. Fruity and spicy with the rest underlying that.
MF- Light-medium bodied with a moderate level of carbonation. A bit thin overall as the texture is just a bit frothy and foamy.
Yeast, fruity and tart with Saison yeast and pale fruits like grape, pear and apple making up a lot of the flavor profile. A bit funky and more suggestive of tart in the aroma than is actually found in the flavor.
