Our country wit. Brewed with lemon verbena from Sparrowbush Farm, coriander seed from Ironwood Farm, and wheat malted by Hudson Valley Malt. Balanced acidity, with notes of cactus fruit, star fruit, dragon fruit, Asian pear, flint. Beautiful lush texture....we hope you will be pleased. Another great label from Natalie Rengan depicting Mine and Tay's abode behind the brewery before we refurbished our building.

Settle Down 2020 from Saurez Family Brewery. Received from @Roy_Hobbs in BIF #14. 500 mL capped bottle. Stored at home at 38 degrees. Reviewed 21/12/21. Note that I use DD/MM/YY protocol.
Hand-written on end of label “6/20”. Served at 47.8 degrees in a hand washed and dried Jester King snifter. Final temperature 52.7 degrees.
Appearance – 4.
First pour – Pale Straw (SRM 2), clear.
Body – Pale Straw (SRM 2), clear. When rear-lite, same. Bottle-conditioned.
Head – Average (Maximum three cm, aggressive center pour), white, fizzy with short retention, diminishing to a three mm crown fed by effervescence and a thin partial cap. Second pour produces a fizzy 1.5 cm head which is gone almost instantly and does not raises the sediment.
Lacing – None.
Aroma – 4 – Initially a bit vinous and fruity (lemon?) with some weak sulfur, no malt, no hops, no yeast, no coriander, no barrels.
Flavor – 3 – Vinous and slightly acidic, no sulfur, no malt, no hops, no yeast, no barrels, no coriander. No ethanol (5 % ABV, as marked on container) taste or aroma. No gastric warming. No dimethylsulfide or diacetyl. Dry finish.
Palate – 4 – Medium, watery, soft but lively carbonation.
Final impression and summation 3.75. Looks great, feels great, smells non-offensive, lacks flavor. Easy drinking (so is water). Barrels finally appear in a couple of post-consumption belches. Couldn’t find any coriander. And if lemon verbena is supposed to add lemon scent/flavor, I’ll remove the credit given to my imagination and re-assign its potential presence to reality.

Bottle from the brewery in NY. Pours a clean and clear light gold with a finger of foamy white head, decent lacing, smell is floral honey, lemon verbena, pollen, lemon peel, and graham cracker, hints of white grape/wine must, orange blossom, and herbal tea, taste is lemon, lemon verbena, floral grassiness, and oak, hints of mint, tea, and musty funk, feel is incredibly light and soft, dry finish, minimal acidity, endlessly drinkable. This beer drinks like a sunny, breezy, spring day in a wildflower field full of bees, just downright pleasant.

Pours a clear, straw color with minimal head that quickly dissipates leaving only a hint around the ring of the glass. Smells bright and lemony. Taste is spectacular. Lemony, crisp, clean and refreshing. This is an amazing beer.

it is fluffy and bready throughout, some mellow funky and fruity acidity dancing around beautifully with floral quality and a pleasant spice, some grassy and hay character. wonderful kiss of coriander comes through clearly but is not overpowering, oaky vanilla quality, there is a ripe funk to it that is just so perfectly rustic and ties the beer together, hints of rose petals, lemon mineral water, and white grape juice, pear, lemon peel. overall an absolutely fabulous beer - textbook suarez, so delicate yet so complex, this perfect rustic like country thing that they have perfected to the extent that it almost brings you right to a certain time and place. wow!
