Notes: Domain is a series of disparate county beers blended together to yield something altogether irreplicable and unique. Some of the threads for this blend were brewed back in the summer of 2016! This blend consists of a large portion of mature Slow Bustle aged on ‘spent’ Danube cherries for a couple of months, mature triangular nature, and year-old 100 ft. North. This blend was bottled in October 2017, and we let it rest in glass for a year so it could come into its own, smooth its edges out and whatnot. Notes of strawberry fruit leather, strawberry fig newtons, toasted almond, gooseberry, wax, pink currants. Rich and deep yet crisp with bright acid.

500 mL bottle. Clear golden. Smells of hefty wine barrel. Red wine, oak, a touch of vanilla. Tastes of aggressive wine as well. A little stone fruit sourness. Very strong oak presence. Lingering wine barrel. Low carbonation. Lightly astringent. Very good.

The beer pours copper gold with a medium white head. It has medium high carbonation. It smells of lemon, dandelions, cherries, and grapefruit. The beer is tart, floral, with barnyard funk, lemon, and cherries. The feel is full. A very unique and enjoyable beer, can’t wait to drink more beers from this brewery.

big thanks to my homie for sharing this, finally, a suarez wild beer, ive had only traditional lagers and pale types until now, so this is a real treat, thanks for sharing dude! beautiful art on the label, and a pretty beer in the glass too, thicker looking than expected, wheaty and a little cloudy, not bright and not muted, somewhere in between, with a fizzy white head and fine retention. smells like a ton of oak, white wine and even sherry notes to me, not sure all the barrels the various threads of the blend may have been aged in, but it appears to my nose to be well beyond neutral oak. tons of nuance too, even if the cherries arent really there for me, apricot jam, raw flower honey, saltwater taffy, even mango sweetness for a moment. seems simple on the grain front, saison-esque, but clean in a lot of ways, wheaty and off dry, with some light generic fruit sweetness and vanilla lent by the oak keep it from being as crisp as it might otherwise be. subtle cognac, under ripe strawberry, and lime zest come to mind as it warms up, again, all wrapped up heavily in oak, giving some real density to an otherwise pretty light brew. i would love to taste the individual elements in this blend on their own, the yeast is awesome, but not as unique as i hoped it might be from suarez after all the chatter about these beers, its mature as can be, no denying, and not too sour to be drinkable which is nice, but the wildness is pretty tame for my palate, much as i like it. overall an impressive beer, showing high competence in a number of areas, and a cool use of fruit without it being cherry tasting hardly at all, they contribute something different entirely. i suspect this will be a gem in the cellar in a few years, but its drinking lovely right now as well. a fun one to share around the holidays!

On tap at Suarez Family Brewery in Livingston, NY.

This one pours a light golden orange color, with a nice fluffy head, and lots of lacing.

This one smells like oak, peach preserves, cherry skin, cherry pits, honey, strawberry, white wine, and hay.

This is such a cool beer. The spent cherries add a really nice flavor- it's not outward cherry juice and stuff like that, but a more subtle cherry skin and almost strawberry-like flavor. There's also peach and some cream, sweet honey, light acidity, white wine, hay, and grass. This is so deeply complex and excellent.

This is light bodied, a bit creamy, and a little bit more fuller bodied than I expected. It's still super drinkable and pretty refreshing.

Aromas are oaky, peach, nutty sweetness almost hinting at honey or vanilla, a grassy/hay like funk, lemon. On palate is peach, a lush strawberry quality, grains, some sweetness and oak up front finishing with a mellow lactic tartness. Mellow hints of cherry and in there as well as a seedy berry quality and some blueberry/cotton candy dancing around in the back. Subtle pepper, some gassy herbaceous and almost funky farmhouse character in the background as well.

Bottle: Poured a clear golden color ale with medium foamy head with limited retention and light lacing. Aroma of tart notes with light funky Brett notes is pleasant. Taste is also a mix of light tart notes, some oak presence and light funky brett notes. Body is about average with good carbonation. Not bad but doesn’t have the level of complexity I was expecting/hoping for.
