Notes / Commercial Description:
Saison-Brett, based on our very popular Tank 7, is assertively dry hopped, then bottle conditioned with various yeasts, including Brettanomyces, a wild strain that imparts a distinctive earthy quality. Though this farmhouse ale was given three months of bottle age prior to release, further cellaring will continue to enhance the “Brett” character, if that's what you're after.

Pours hazy golden in color with hues of straw and a huge white foamy head that has great retention.

Smell has some nice saison yeasty aromas forward with notes of cracked pepper and big clove presence. Brett comes in with some earthy aromas near the mid section but is relatively faint. Some nice straw like grainy malt comes in near the end.

Brett is the first to hit the palate with some big earthy barnyard flavors and a mild tartness. Some peppery yeast dominates the midsection with some milder notes of cardamon and clove. There is a nice straw like malt on the backend.

Mouthfeel has huge amounts of carbonation that are maybe a little too assertive but makes for a nice head. Body is light due to carbonation and there is a dry finish.

The brett was much more pronounced in this bottle then the first one I had. It may have something to do with it being left outside all day in a cooler on a 85 degree day but I have to say that I like more then the first time around.

A: absolutely beautiful beer with intense carbonation and a large foamy Whitehead, clear golden body.

S: saison on yeast, a slight hint of acidity, a touch of alcohol.

T: not really doing it for me, perhaps this one would be better after some time. I am getting a fairly strong alcohol flavor despite relatively low ABV, sharper bitterness than I expected and just a tiny hint of bret funk.

M: silky with tons of carbonation, really great.

O: judging by my look and mouth feel ratings, this beer was obviously made well, the flavors just didn't quite work for me and perhaps it needs some time to mature.
