Notes / Commercial Description:
Saison-Brett, based on our very popular Tank 7, is assertively dry hopped, then bottle conditioned with various yeasts, including Brettanomyces, a wild strain that imparts a distinctive earthy quality. Though this farmhouse ale was given three months of bottle age prior to release, further cellaring will continue to enhance the “Brett” character, if that's what you're after.

2013 vintage purchased in late October. Cellared for six months by me. The cork was a super b--ch to get out, I finally resorted to a corkscrew which still took awhile to work. Poured from the 25.4 oz. bottle into a stemmed tulip glass.

a: Clear then cloudy gold with an enormous white head which required several additional pours to fill the glass. Each pour of an ounce or two produced an expanding head which reached the top of the glass and then receded rather quickly to rocky surface foam and patchy lacing. This sucker has carbonation to burn.

s: Ripe fruit

t: Belgian fruity yeast in a strong but pleasant measure, bitterness following and lingering on the sides of the tongue. Finish leaves a bit of the fruit taste. 8.5% ABV is beauitfully covered, making this a bit dangerous.

m: Moderate with good body. Quite a lot of carbonation tingle as expected after seeing the heads form.

o: Certainly an outstanding saison, in the BA top 250 for good reason., in fact so tasty I had to force myself not to drink it all in one half hour session. Generally I am not a fan of Bretts, they can be too funky for my taste, but this is the second one I really enjoyed.

Cork comes out readily with an epic pop, flying a good ten feet into the air, and my hand is quickly soaked in gushing foam. Not much is lost though, and pouring results in a predictably massive, airy head of persistent sea foam that extends an inch or more above the rim of the glass. Things eventually settle down to reveal a hazy orange body. The aroma is fresh and elegant rather than anything I would describe as "funky"...very Orval-like in its flowery nature, along with pear and hay. Big, flowery Brett, some pale malt sweetness, grass, orange peel, spicy yeast, and pomaceous fruit juices in the flavor. Medium-plus bodied, creamy, yet pretty drying. I wish it was a little lighter, something in the 6% ABV range, but still a tasty treat. I'll probably snag a bottle of this year's batch to try it fresh for comparison.
