Notes / Commercial Description:
Saison-Brett, based on our very popular Tank 7, is assertively dry hopped, then bottle conditioned with various yeasts, including Brettanomyces, a wild strain that imparts a distinctive earthy quality. Though this farmhouse ale was given three months of bottle age prior to release, further cellaring will continue to enhance the “Brett” character, if that's what you're after.

Sampled from a 750ml bottle in a Duvel glass.

A - A huge white head that lasts forever. Golden and very clear with a constant rise of bubbles.

S - Fruity and funky with a hint of banana and bubble gum.

T - Fruity and spicy with a hint of funk / horseblanket. Dry and crisp with a slight hop bitterness. The 8.5% ABV is well hidden.

M - Very light and airy.

O - A very interesting and complex beer.

Huge fluffy white head and a golden body filled with carbonation rising to the top at breakneck speed.

The brett is working it's magic very nicely right now at roughly 6 mo in the bottle at this point. Still has great freshness to it. Lemon, grass, herbal, earthy, melon.

The flavor has more of that medicinal quality that comes out in bretted beers. Earthy and peppery yeast as well.

Highly carbonated on the palate. Medium bodied and ends dry. Really great.

750mL bottle shipped from an online retailer just last week. Poured into a Hill Farmstead oversized wine glass.

When un-corked, a hearty pop and a little overflow, despite allowing to rest for a week in the fridge after shipping.

A. Big big head is the first thing I notice, but it isn't completely overboard. Frothy white, with big bubbles scattered throughout, the head is never ending and laces randomly, but very densely. It sits atop a nicely colored liquid of peachy straw color, with a moderate haze. After settling a while, some small light, dusty particles of yeast settle out. Not much of an effervescent bubbling.

S. Friendly sweetness meets the olfactory senses along with a little hay, some bready, some white grape and kiwi, and some prickly spicy quality, akin to coriander. Simple, but well layered.

T. Again, a light and embrace-able sweetness is first, followed by a little funky barnyard, hay, hearty bread, pear/white grape. A smooth finish brings just a little funky spiciness, again channeling coriander, or white pepper.

M. Soft at first, then prickly. Light bodied, but definitely textured enough to not be watery. Finishes strongly, with a little prickle to match the spice flavor. Although, there is just the slightest astringent tin like bite.

O. Very well done, very drinkable, soft and approachable flavors, not overly complex but subtly layered. Good enough that when I had a taste, I sought it out for another bottle (and another for cellaring!). Hard to say, but the carbonation issues I sense could possibly be blamed on shipping.
