”Do you know what dwells in a glass?” asks Ole, in Hans Christian Andersen's The Watchman of the Tower. Better known for stories such as The Little Mermaid, Andersen wrote this short, cautionary tale for a somewhat older audience. Our quadrupel ale, also meant for the mature connoisseur, is a deep and mysterious libation, dark auburn and full-bodied, its sweetness deceptive. A - poured into oversized wine glass poured a creamy 2 finger head that turned into sudsy soapy bubbled that diminished into a thin layer over the reddish Amber very murky a sediment filled ale.

S - deffinitely picking up alcohol plums candy smells a nutmeg spice aswell

T - plums a sweet honeysuckle alcohol taste.

M - medium body with creamy bubbly finish

O - very very complex every nose is different and taste dark fruits exploding on the palate.

A big, creamy, beige head slowly turns foamy as it settles and glistens gold over a clear, reddish, dark amber (SRM 15). Columns of carbonation support the head as it slowly settles to one inch, leaving thick rings of lace.

Subtle plum and candy sugar are offset by faint funkiness. Warmth brings out fresh figs.

A Unibroue tulip glass presents a well-balanced quad that oscillates from slightly sweet to slightly bitter. Dark fruits of plum and fig are followed by a hint of tart cherry. The finish is modestly long and dominated by warming alcohol.

The full body has a viscous, silky texture. Alcohol is warm. High effervescence is capped by a dry finish.

This one warms quite well, developing character along the way. It makes for a contemplative beer that proves to be quite enjoyable on a cool autumn evening before dinner. I enjoyed it with a pungent, creamy bleu “Valdbon”. The cheese brought out a sweet fruitiness, otherwise not detected.
