Dubbel is a beer style developed by Belgian Trappists in the Middle Ages, part of a naming convention that also includes the lighter single and stronger trippel. All well and good, you say, but what's this “Nommo” business? Well, the Nommo are ancestral spirits worshipped by the Dogon tribe of the West African nation of Mali. The name is derived from a Dogon word meaning “to make one drink.” No, really. Nommo usually described as amphibious, hermaphroditic, fish-like creatures, were created by the sky god Amma, who caused them to multiply by splitting them into doubled sets of twins. Seeing a trend here? Maybe it's farfetched, but we think the story of the Nommo makes this whole enterprise a little more fun and interesting.

A: Deep dirty brown with occasionally glowing red around the edges. Head is a couple inches of foamy orange tinted beige fluff. Once it settles there's a 1/4" remaining.

S: Bright, fruity, festively spicy, and warm. Apples, bananas, cinnamon, lemon zest, caramel, clove-like, tobacco, and sugar cookies. Warmingly alcoholic.

T: Flavors are smooth, full, and abundant. Lots of spice with delicate fruit and brown sugar. Creamy banana, yes to coriander and cinnamon, and some licorice (may only be noticing that because I'm looking for star anise).

M: Smooth, finely carbonated, fullish body. Bit of residual dryness through the finish.

O: A pretty good beer but not a great representation of the style. I would drink this again, but I would prefer to not pay full price.

From notes taken in December 2013: Pours clear, deep amber/pale brown producing 3+ fingers of lasting, tan, foamy head that leaves a nice sticky coating of lacing. Aroma is dark malts, molasses, coriander, spice, dark fruits, alcohol, a hint of banana, clove & very faint floral hop tones. Taste is similar with cinnamon, roasted nuts & stronger notes of coriander, banana, clove & hints of anise & cherry. Alcohol is there too. Overall a little sweet for the style in my opinion and the thing that keeps me from giving it a higher rating. Finishes peppery/spicy which holds well into the cinnamon, molasses & coriander aftertaste. Mouthfeel is medium bodied, medium-heavy carbonation, silky/creamy & lightly chewy, with a pleasant spicy bite in the finish.

Comes out of the tap a dark translucent amber with a fairly thick pale golden tan head. Fruity aroma has hints of butterscotch and malt. Rich flavor has malty, woody, fruity and subtle caramel and butterscotch notes, a little sweetness and a little hoppy bitterness. Smooth, firm texture has a good amount of fizz and jazz. Gotta love the story behind the name.

I have had this bottled 6 months before it best by date, on tap and aged for a year past its best by date. It is much better before its best by date. Fresh it has a dark, large pitted fruit nose with spice and sweet malt suggesting a carmelly fruit cake. It pours brilliant chestnut brown with a white to off-white head with a texture of whipped egg whites. The palate is peach to plum over sweet caramelly malt with traces of cinnamon, anise and coriander anode a big pinch of white pepper. The texture is medium full and delightfully soft and very finely bubbled. The body is medium full with above average carbonation.
