A: golden to almost brown and cloudy apprarance. Has the appearance of a little oxidized NEIPA. Little head with fine bubbles.

A: peach grapefruit mango and lots of citrus. Very juicy and good fruit blend.

F: nice bitter blend of juicy fruits with citrus and mango. Dank but juicy combination. Nice but very bitter.

M: medium body with very little to no carbonation. Lingering bitterness.

O: lovely aromas with good flavor. Very bitter. Almost no carbonation and no head when poured. Somewhat brown but doesn’t have oxidation flavors. May be better on draft.

A very good IIPA! With only a single hop, not much complexity, but enjoyable.

Dirty (cloudy) amber color. Nice starting head but it fades to rim bubbles. Only a few minor spots on the glass as I drink the beer.

A nice blend weedy hop and mildly toasted pale malts (and perhaps some lighter crystal malt). It's biting but attractive.

The taste is like the smell but I get a strong presence of alcohol warmth. The hop remains pronounced leading to a strong long aftertaste. Still, it remains rich and well-balanced. Ample carbonation but it's not distracting.

Murky brown, looks orange in the light. Loose sudsy bubbles break apart fairly quickly, leaving behind some chunky bits of lacing. Wispy cirrus skim across the surface.

Aroma is oddly malty, with sweet tropical fruit in the background. Taste is also heavy in the malt department, with a muddled fruit juice sweetness. Pineapple/mango/passionfruit, juicyfruit gum. Medium bodied and slick with low carbonation, and a lingering hop bitterness. Overall this was ok, but a little disjointed and hard to get through.

Poured from a tallboy can into a Dogfish Head tulip

L: Hazed golden pour with thick fluffy white head. Great lacing.

S: Dank and fruity... huge tropicals and citrus.

T/F: Follows the nose. A big time juice bomb. All the tropical loveliness of mosaic hops... pineapple, grapefruit, papaya, and mango. Sweet up front... muted bitterness. Sticky on the tongue with more fruit salad at the finish.

O: An elite NEIPA. Outstanding flavor and an all-around excellent beer. Hubbard's Cave does not disappoint.

Iron & Glass - Romeoville, IL

One Hop Mosaic pops open with the release of some gunsmoke. It pours with enough haziness to be nearly opaque but you can see some shadows through the glass when backlit. The body flits between tarnished golden and light orange while a tightly bubbled, off white foam sets the crown. The head grows to a healthy finger in height on the pour but eventually falls to a tight ring and skimming.

The nose is big and bold with Mosaic, which is OK with me. Pineapple and tangerine begins but is quickly overtaken by a more robust blueberry than I normally come across in Mosaic. There's a slight dustiness over the top of the fruit aspect before the murky, musty, forest floor, sweat sock, dank qualities take over. The malt has a touch of sweetness that adds to the overall fruitiness with some sugar cookie and cookie dough. A little peppery booziness emerges with some warmth. Very nice!

The flavor profile follows suit and actually softens the edges out a bit. The aforementioned fruits make their appearance, overripe and a little musty. Blueberry washes through mid palate before it runs into a slow, long finish of all those dank aspects mentioned above. Forest floor, pine needles, musty leather, and even some funky socks. A soft maltiness wraps it up, sugar cookie and a slight drizzle of caramel. Zero alcohol presence. Very good beer.

The body sits at moderate in weight, maybe even leaning toward the lighter side of moderate. Carbonation is soft on the tongue but seems to keeps things moving at a solid pace while the finish dries up quickly and a moderate, teeth coating bitterness lingers long after the swallow. Right where I like it.

This is the best beer I've had from Hubbard's Cave and one of the better new IPAs I've had recently. They went heavy handed with Mosaic and it brings a ton of character. Mosaic is a pretty amazing hop. It really brings a lot to the table. What very few rough edges the nose showed were ironed out in the flavor. Good body and carbonation with a drinkability off the charts. A dry, bitter finish wraps it up nicely.
