Pours a clear good color with a beautiful white head reminiscent of champagne. Great stone fruit tartness, lemongrass and funk that pays homage to the lambic tradition. The flavor follows the nose and is light in body and a medium acidity that is refreshing to the palate.

A 500ml bottle, 2017 release. Poured into a Lost Abbey teku glass.
Appearance: A cloudy golden orange colour with a two finger white head that had pretty good retention and left some nice lacing.
Aroma: Funky, barnyard, tart, peach, grape, oak and lemon juice.
Taste: Sour, tart, lemon, grape and oak with light funk.
Mouthfeel: Light to medium bodied with moderate to high prickly carbonation.
Overall: Nice and refreshing but strangely not much funk in the taste considering how much I got from the aroma. But nonetheless, still very good.

Pours an unclear light orange with some fine foam.
Smell is acidic with some straw and horse blanket preceding notes of lemon, peach and Seville oranges.
Taste is planted firmly in the sour camp. Not mouthpuckering, but not far off. Notes if apple orange, gooseberries and candied orange peel is followed by and earthy, grapefruity bitterness. Great balance, a pretty damn deep in flavor.
Mouthfeel is medium, with prickly carbonation.
Overall, a terrific sour, balanced and complex, but still accessible.

so this one is their base lambic, if you can describe such a beer so simply and nonchalantly. this is one of the more authentic american made takes on this classic style that i have encountered, and while it drinks rather delicately, its not simple, its a product of high refinement and careful blending, and whoever is responsible of this, is quite obviously extremely competent! its got a pale straw yellow color to it, soft haze, and a short white head that settles pretty quick. the aroma is the classic aged hops, grassy without being bitter, no alpha here at all, united with a strong oak presence, and the wild yeast, which is as authentic a culture or mix of agents as i have seen, it could be belgian made, for real. notes of lemon and white wine in nose and taste, with the mustiness and almost rotting funk of the wood and yeast together, controlled decay rather, a light herbal element, white grape and stone fruit, apricot even, and a fairly assertive sourness with the funk, dry in the finish and with some wheat character throughout as well. its gorgeous, and while i think some of the beers they do that use this as a blending element are even more complex and compelling, its pretty hard to not immediately rank this among the better beers in this style produced here in the states. it shows both understanding of tradition and technical expertise, and i really enjoyed it! these guys are coming up fast!
