Grisette is a modern form of saison, influenced by the popular pilsner style but still brewed with traditional farmhouse yeast and rustic ingredients. Refreshing and crisp with a delicate hop character that lets our house yeast blend shine. Brewed with pilsner malt, Styrian Goldings and Sterling hops.

This beer is dedicated to J.G. Ballard, one of the great science fiction writers whose short essay Things I Wish I Could Tell My 18 Year Old Self was influential to the starting of Zebulon Brewing.

Appearance: Well, this is a first - as soon as the cage was removed, the cork started to pop up and, if I wasn't paying attention, could have knocked an eye out when it burst; I raced over to the sink and, here is the thing...nothing spewed out; so, out pours a hazy golden liquid capped by three inches of foam; the stickage was not remarkable but a few thick shards were left lingering

Smell: Angel food cake, with hints of grass and wheat; there is a beguiling sweet character to the aromatics

Taste: Angel food cake on the front end, with the grass and wheat flavors building; nicely balanced, with a bit of peppery spice, through the finish

Mouthfeel: Light to medium body with moderate carbonation

Overall: Pilsner meet Belgian pale, with the peppery character adding complexity

Pours a golden colored body with a towering, lumpy white head. Aroma is light and fresh: flowers, peppery yeast, and rustic, nutty grain. Flavor has a focus on the yeast, but the spicy fruit esters don't overpower a solid grainy wheat finish. Reminds me of an Ommegang beer. Pretty light bodied, nicely dry, and drinkable. A tasty, simple Belgian ale...can't wait to try more from Zebulon.
