We love the combination of juicy hops and the fruity esters and phenolics of Belgian yeast. Now we added Brettanomyces at the point of bottling to provide an extra layer of complexity and funk to our Farmhouse IPA. “Brett” is a formally wild yeast feared by brewers and vintners alike, but to some brewers Brett’s earthy and tangy flavors are as familiar and inviting as an old friend’s embrace. We hope you and Brett will be fast friends too.

(Batch 3) Poured a hazy, golden-yellow color with a small, white head of foam. It smelled phenolic, yeasty and citrusy. Nice funky flavor with bitter bites of citrus and a toasty/yeasty finish.

Pours out a foggy, cloudy orange with three fingers of white, pillowy foam. Easily more head formation available. Great head retention with a few strings of lacing left behind. Aroma is teeming with grapefruit, and pine with delightful Belgian yeast esters, and spices behind. There is a sour funkiness throughout the aroma. Flavor profile is banana, grapefruit, and wheat bread with a twinge of Belgian yeast spice at the back. Not much sour funkiness to the flavor profile, although there is some there. Mouth feel is smooth, and velvety, with a medium thickness. Overall, nice notes hit throughout this beer. The brett stays well within check, only giving this beer a light film of funk in both the aroma and favor profile.
