Roasty. Comforting. Dry. Sessionable. For St. Patrick's Day 2021, we set out to brew an endlessly drinkable Irish Stout with malt complexity typically reserved for beers with much higher ABVs. An array of roasted and specialty grain is woven together to offer nuance and personality with each sip.
Presenting a deep black color with a fluffy, coffee-soaked head, our Irish Stout offers an intricate aroma with welcomed familiarity. Rich milk chocolate, dark roast coffee, toasted biscuit, and subtle caramel all make appearances throughout the glass. Roast-forward, with a welcomed, mildly bitter finish, this traditional offering is one that we're delighted to present to you.

In a season when we are all a little Irish, Trillium brings out an Irish stout that's better than any pot of gold for beer lovers.
Jet black and releasing a tall mocha-whipped foam, their Irish Stout swoons the senses with dark roast coffee, cocoa, caramel and a touch of cream. As it's dark sweetness washes over the tongue, the sweetness of french-press coffee and nougat sweetness come to mind. Deeply malty, the session opens up to mild smoky char, cocoa powder and a broad woodsy bitterness to close out it's taste.
Full bodied and built more like a common American stout, their Irish Stout finishes fuller, creamier and slightly more acrid in it's roast character. And unfortunately we've come to expect the nitro gas to prop up these styles for better or worse.

Near perfect beer for the style me thinks.
Pours dark brown to black in color with dark tan head.
Nose is bready, charr, and coffee.
Taste is cocoa and dark fruits maybe.
Nice bitterness on back

Yeah, this one can ride. Like Jack Nicholson bumming one in the 60’s on the back of a Harley, Irish Stout shows up to the party and everyone knows its name. This one is legit like Lance Armstrong before the truth came out. Now, Irish Stout may not be the Grand Marshal of the Rose Parade. That said, it isn’t trying to be. IS is more so a legit option off the bench that can get a sac bunt down with ease. No, I will not be calling the president of Ireland about this one claiming it to be the best Irish Stout to be. But again, it just shows up to work when it has to. Rain, sleet, snow, or massive hangover, Trillium Irish Stout is a winner (even if it doesn’t eat its dinner).

Pours a fizzy foamy almost 1 finger brown head with fair retention, a touch of lacing, dark basically black color
Nose brings roasted malts, a hint of char, coffee, into a bit of dark chocolate, mild sweet nougat caramel candy,
Taste starts more with roasted malts and dark chocolate, cocoa, a bit of baking spices, into mild char and roasted coffee, a hint of burnt marshmallow, light bitter spicy hops, dry finish with a bit more spicy hop bitterness
Mouth is med bod and a bit creamy, med carb
Overall pretty good, solid Irish dry stout with hints of sweet notes and creamy feel, but still nicely dry

Pours thick dark brown, tan colored head that dissipates quickly not really any lacing to speak of
Aroma of roasted malt and coffee, chocolate and vanilla notes
Taste is roasted coffee, caramel, dark chocolate vanilla
Mouth feel is medium thickness, coffee and dark chocolate bitterness, fairly creamy, coats the mouth and finishes with a long lingering pretty dry feel
Overall for the bitter aroma and coffee and dark chocolate taste it’s pretty smooth. Layers really come out as it warms. Nice drinking on the lighter side stout.

Mouth feel is medium thickness, coffee and dark chocolate bitterness, fairly creamy, coats the mouth and finishes with a long lingering pretty dry feel
Overall for the bitter aroma and coffee and dark chocolate taste it’s pretty smooth. Layers really come out as it warms. Nice drinking on the lighter side stout.

Pours black with a dense creamy lasting tan light brown colored foam head. Smells like fresh cocoa chocolate, dark coffee, creamy caramel, toffee, roasty toasted malts, cola, dark dried fruits, with mild earthy herbal grassy hops. Tastes like dark chocolate, coffee, cola, roasty toasted malts, creamy caramel, toffee, brown sugar, dark dried fruits, raisin, with some earthy herbal grassy hops. Feels medium bodied, fairly creamy with moderate smooth carbonation. Overall a nice Irish stout.

Not bad but I hoped for more from Trillium. Head dissipates quickly. Body seems thin. Roasted malt with coffee overtones. I’ll stick with Guinness.
