Fish Paralyzer is a Belgian-style pale ale that is moderately hopped with Tradition and Saaz. The grain bill calls for a combination of specialty malt to produce its sweetness and copper color. The Belgian Ale yeast used provides a strong Belgian essence to phenolic and spicy flavors and aromas.

22 ounce bottle into tulip glass, 5/15/2012 bottle code on the bottom. Pours very hazy deep reddish amber color with a 2 finger dense and rocky light khaki head with great retention, that reduces to a nice cap that lingers. Nice soapy lacing clings around the glass, with a large amount of streaming carbonation retaining the head. Aromas of big raisin, plum, orange peel, pear, apple, clove, pepper, honey, caramel, candi sugar, bread, herbal, grass, and yeast earthiness. Nice and pleasant aromas with good balance and complexity of fruity/spicy yeast, dark/bready malt, and earthy hop notes; with solid strength. Taste of raisin, plum, orange peel, pear, apple, clove, pepper, honey, caramel, candi sugar, bread, herbal, grass, and yeast earthiness. Good amount of earthy yeast spiciness on the finish; with lingering notes of raisin, plum, orange peel, pear, apple, clove, pepper, honey, candi sugar, bread, herbal, grass, and yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/spicy yeast, bready malt, and earthy hop flavors; with good malt/yeast flavor balance and zero cloying flavors after the finish. High carbonation and medium bodied; with a very smooth, crisp, and lightly creamy/prickly mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very good Belgian strong pale ale. All around good complexity and balance of fruity/spicy yeast, dark/bready malt, and earthy hop flavors; and very smooth and crisp to sip on. A nicely enjoyable offering.

On draft at The Lark, East Northport, NY.

Poured murky dark copper hue with a one finger creamy white head. There was good retention and lacing.

The smell featured light cereal malts, a touch of honey and a light ester.

The taste consisted of sweet malts, an earthy hop spice and a faint yeast ester.

The mouthfeel was full with a residual bitterness.

Overall a tasty user friendly experience.
