Pours a darker brownish amber color with tan colored head. Bourbon, caramel sweetness, bread, oak, and some cereal on the nose; follows onto the palate. Medium bodied. Finishes very smooth with some caramel and a touch of bourbon.

A - Pours a clear brown with a small head that disappears quickly.
S - Aroma is mostly caramel.
T - Flavor is quite sweet up front with barrel making up the rest of the flavor profile.
M - Carbonation is low, mouth feel is thin.
O - Kinda of disappointed in this one. Not a bad beer, just nothing special to recommend. Likely better on tap.

Best thing here is the aroma: at first loads of caramel, then toned down cocoa, leather, a bit of raisins; didn't pick up any bourbon. Flavor was kind of a surprise as it was kind of sweet tart and just the barest hint of bourbon. Highly carbonated. Short ok finish. Bit of a disappointment.

I'm not one for barrel-aged beers, let alone a style of beer that's rather experimental with bourbon-barrel aging, but I've been a fan of Hinterland for many years, so I thought I'd give this one a try.
L -- Rather hazy, dark chestnut brown with light ruby highlights and a very resilient, creamy, light tan head.
S -- Solid vanilla bourbon notes and hot alcohol, but also some off tart fruit esters. Not off-putting, but definitely not as clean as I'd expect for a Doppelbock.
T -- Tart black cherry notes up front with peppery alcohol and vanilla notes following. Some malty breadiness, in a Doppelbock vein, fighting to be recognized in the finish, but being overshadowed by the tart black cherry character that lingers through the aftertaste.
F -- Somewhat lighter body than I expected: light medium with a slick and soft mouthfeel with a dry-ish finish from alcohol.
O -- If I were to drink this without knowing the style it started as I'd tag it as a Winter Warmer or some form of Old Ale. There's really very little Doppelbock character in this and I think that's the downfall of the beer.

Poured from the bottle into a tulip. Appears a dark opaque brown with a thick, frothy tan head that never completely dissipates. The nose is all sweetness and bourbon. The taste is again all bourbon, oak and sweet, malt. The mouthfeel is sticky, as I expected from the first whiff. Overall, it's just too one dimensional, and not complex enough. An interesting concept, but doesn't blow me away.
