As the worlds of haphazard, spontaneity and control intertwine, the brewers at Calusa would likely admit that craft only takes their sour ale so far, and that the wrangle to steer the outcome to some sort of taste that's not only acceptable but craved is something of their wildest dreams.

And its with that notion that Wildest Dreams delivers with a pale golden color, laced with a foggy haze and a gentle swirl of foam. An earthy and aromatic perfume captivates the senses with weathered citrus, dusty woods and an earthen perfume. Dryly malty with suggestions of wafer, sourdough and saltwater taffy.

Yet across the middle palate, the sweetness rapidly dissolves and the peels, piths and ribs of grapefruit, orange, lime, lemon and pineapple all take a dehydrated tone though a peppery balance of vinous white wine, white pepper, cumin and spicy oak tannins. Less musty and more woodsy, a notion of cork, attic woods and cashew decorate the bitter rindy finish.

Medium body and trending powdery dry, the beer's oaken finish keeps the session arid and drinkable. A return of damp bulap, cellar pungency and tannic rich white wine trends sour with an off vinegar acidity that quenches the thirst and refreshes the palate with utter ease.
