Brooklyn Quintaceratops started life as a batch of our "prehistoric" quadrupel-style ale called Quadraceratops. Having paid homage to a traditional Belgian beer style, we decided to juice it up further with another excellent historic drink: old-school Caribbean rum. And by old-school, we mean full of sugar cane, funk, and earth, the way rum tasted centuries ago. Luckily, a handful of distillers still hold fast to the old ways.

Months in Trinidadian rum barrels and a victory lap in American bourbon barrels rendered the beer deeply funky like the rums of old, with flavors of tobacco, volcanic soil, and molasses. The first sip might raise your eyebrows, but like some other funktastic foods and drinks, Quintaceratops rewards the intrepid drinker with a wild ride.

32 oz growler from DeCiccos's Ardsley. Huge light brown head that fades to two finger quickly and then sits. Lots of lace and a lovely garnet brown. Carbonation visible with each sip and leaves films of light lace. Nose is sweet and rich with dark fruits and Belgo/banana. Light peppery alcohol and caramel toffee sugars. Taste is just spot on. Figs, plums, raisins, toffee, cherries, banana. Nice malt bill that's full but supports more than takes the spotlight. The yeast and fruity esters are the stars here. It's all there in abundance with a perfect balance. Finish is surprisingly crisp and a combination of earthy fuggles and nugget sharpness. Dry with a light bitterness lingering . Full velvety feel that has a wonderful carbonation and hearty chew. One of the better Quads I've had and one I'd love to were bottled.

Pours dark brown with a 2 finger beige head, with good retention and lacing. The aroma has pears, apples, bourbon, rum, brown sugar, and dark fruit.

Has a sweet taste with pears, apples, bourbon, rum, dark fruit, brown sugar, and molasses. Light hop bitterness to keep the sweetness in check. There is no taste of alcohol. It is not easy to hide 10.9 % abv, but Brooklyn managed to do it.

Medium to full bodied with average carbonation.Nicely made and well worth buying again..

Draft poured into a standard pint glass. Nicenhead initially on a dark purple-black beer. Very smooth mouth feel with a sweet finish, noticeable blueberry notes. Stills manages to have a nice bitterness to balance the sweetness.

Raisins, figs, dates, and cocoa in aroma. Roast malt emerges as it warms. There's a touch of pear and apple esters. Flavor is somewhat muted, with underpinnings of pear and green apple dominating. The roast character is more subtle than expected, given the color, and the finish isn't as bitter/roasty. Notes of cocoa weave throughout. Alcohol heat hits in the aftertaste. Tart cherry character adds complexity. Dark for a quad, and not as sweet as some, but nice ester profile and dark fruit notes.

Poured from a 750 ml corked bottle into a Brooklyn chalice.

Appearance: Pours a dark brownish black with a lot of bubbles. Huge three finger tan head which slowly settles into a thin creamy layer.

Smell: A rich and pretty sweet Belgian quad style aroma with big hints of rum, whiskey, and dark fruits. Upfront barrel presence with a big scent of rum along with some bourbon whiskey, vanilla, and oak. Sweet hints of candied Belgian sugar. Belgian yeast with some peppers, cinnamon, and slight clove. Sweet malt hints of caramel and toffee along with some straw and biscuit. Big presence of fruit esters with some cherries and banana along with dark fruit hints of raisin, fig, prune, and plum. Also some hints of coconut and hops. A really nice aroma.

Taste: Like it smells, a pretty rich and sweet Quad style taste with big notes of rum, whiskey, and dark fruit. Big barrel presence with sweet notes of rum along with some bourbon whiskey notes of vanilla and oak. Belgian yeast with some pepper, cinnamon, and clove. Sweet taste of candied sugar and molasses. Toasted malt with notes of caramel, toffee, straw, and biscuit. Fruit notes of cherry, apple, and banana along with good dark fruit notes of raisin, prune, plum, and fig. Subtle earthy hop bitterness. A very good Quad taste that is sweet but not overwhelming.

Mouthfeel: Medium bodied with a high level of carbonation. Creamy, silky, and somewhat syrupy. Mild alcohol heat but still pretty smooth.

Overall: A very good twist on a Belgian Quad. Good combination of rum, whiskey, and fruit flavors with a smooth silky body.

Other reviewers seem to think this is a good quad. I had this on tap and I really have to disagree.

Tastes more like a brown ale than a quad. Flavor is muted, not big or dep like a quad should be.

Yes, there is dark fruit and raisin and fig, but it's all toned down. I get some brown ale style maltiness and I get some stronger carbonation, which I do not associate with the style. I might even call this light and a little refreshing - nothing I should be saying about a quad.

Where is the mouthfeel? This is thin!

Where is the deep, dark flavor? This is more bright fruit than dark fruit!

Where is the rich, smooth alcohol notes? This is positively one dimensional.

Meh. Meh. Meh.
