Appearance - Incredible head. Like whipped cream. Very tiny bubbles, very active in the glass with bubbles racing upward. Super dense, thick and buttery. Bright white and heavy lacing. Retention is excellent as well. Very impressive. Perfect.

Smell - Lemon, mango, fresh hop/ hemp/ lupulin oil, raw honey, subtle dill pickle funk is noticeable, zesty, vanilla, fresh flowers, plants, coriander seeds/ spice, pear, lemon peel and fresh bread.

Taste - Lemon, apple, pear, bubblegum, sour dough, fresh white bread, candied orange peel/ lemon peel, coriander seeds, clear Belgian candi sugar, cookie dough, pilsner malt/ wheat grain, and fresh-cut grass/ flowers. Quite dry and bitter, but works so well. Dry hopping a second time during fermentation really creates a cleaner, stronger bitter finish.

Mouthfeel - Extremely chewy, yet sharp and clean. Stimulates sour and acidic taste buds. High carbonation that helps to make this beer really pop! Coats the mouth. Felt all throughout the mouth -- mainly on the roof and front. Tingly and fizzy. Champagne-like.

Overall - This may be one of the best Farmhouse ales I've ever had, personally. Perfectly balanced, perfectly dry-hopped, perfectly succinct. A wonderful Farmhouse. Crisp, clean, sugary, complex and layered. The Sorachi Ace also makes quite a statement. Very floral, funky and natural tasting, almost like flowers and cannabis with rich sugars and fresh yeast. Delicious. It doesn't get much better than this. Teetering on perfection -- in fact, I do not know what could be improved. I rate this even higher given the fun experimentation.

Lemon sets the tone from the bright yellow color to the nose and taste. Some bubblegum and white pepper, there is a sweet and spicy feel about the whole experience. The malt is subdued but present with a more yeast tones an light lemony hops. Really like this, maybe not love it but worth the try.

750ml corked and caged bottle marked '0822'. so it's about 2 years old

Look is a very hazy yellow, like a yellow crayon, with an orange background. Sudsy head that fades. Smell is peppery yeast, rice paper, and lots of lemon, grass, and lemongrass. Taste is crisp and buttery yeast, well water, and lemon drop tasting hops. Not too bitter. Feel is light and much less cloying than other saisons.

I like it, even with ~2 years on it.
