Poured a clear, straw color with about 2 fingers of marshmallow-soft white head. Aromas of the Belgian yeast (spicy and a hint peppery), some lemon grass, lemon, celery? This is a unique hop for sure. Delicious farm-style with really unique notes combined with well-intentioned balance. Slightly dry finish with some lingering notes of the lemongrass. This is a winner.

On-tap 10/7/2014 at Doherty’s Ale House in Warwick, RI, served in a tapered pint glass.

A: The beer is a light yellow color, with a large foamy white head that fades slowly and leaves a thick lace on the glass.

S: The aroma contains spice, light caramelized malts, Belgian yeast, some citrus and some hops.

T: The taste starts out with a bitter bite which seems to be a combination of wild Belgian yeast and a grassy hops presence. Then some sweetness comes in from flavors of citrus and spices. The malt character is hearty but not too heavy and brings a good balance. The after-taste is slightly tart.

M: Crisp and smooth, medium body, medium carbonation, finish is dry and slightly sticky.

O: Tasty with good complexity, goes down easily, not too filling, decent kick, good representation of style, this is a solid beer to drink for a while.

*Have had this beer several times now, both on tap, and from a 750 mL bottle.

Appearance: Straw-hay, unfiltered. More in the ‘gold-yellow’ direction than the orange-hued. Vigorous, foamy cream-coloured head.

Aromas: Classic Belgian yeast (white pepper, clove-phenol) with assertive hop presence and light malt. In this case, dry-hopping works well. Fresh bosc pear and citrus (grapefruit zest mixed with lime zest). In many ways the Sorachi hops are reminiscent of Cascade, but way more subtle.
Palate: Prickly carbonation, "saison-like" (that mild ‘farmhouse’ note), with a dry, roasted nuttiness. Complex fruity white raisin-pear-apricot finish.

A ‘classic’ saison that introduces a hybrid touch. North American-style dry-hopping with Japanese hops.
