Brewed in collaboration with our friends at Equilibrium Brewery. Inspired by our shared cocktail love for the mojito, and it's variants, we crafted Cojito, a Double IPA conditioned with lime, fresh mint leaves, and toasted coconut.

This was poured into a tulip.
The appearance was a great looking burnt yellow color with a mellow brightness turning about through that yellow haziness. Small forming head with a soft foam mildly dissipating to leave a stealthy film coating in its lace.
The aroma had some shaved coconut along with lime zest and guiding a fine balance towards some pineapple sweetness. Takes a while but the mint leaves do show up underneath.
The flavor leaned towards a slight sweet coconut initially with a mellow toastiness to it. Lime zest lingers in for a shy second and fades nicely into a refined mintiness. Aftertaste was all about the toasted coconut.
The mouthfeel was about medium bodied with a fair sipping quality about it. Nice low carbonation as expected. Luckily, the line zest doesn't distract and seems to provide enough grip to keep this one from getting anywhere to be close to be sticky. Finishes in an exceptional way with toasted coconut bits and lime zest.
Overall, very nicely done New England styled IPA, I'd have again.

Foam/Equilibrium collaboration, IIPA with mint leaves, lime, and toasted coconut. Nicely executed with a pleasant coconut flavor without tasting like SPF 45 tanning lotion.
