Blended from a variety of barrels filled over the winter of 2020.2021, Serenata was refermented on a combination of three cherry varieties, chopped rhubarb, and organic Madagascar vanilla beans. All of the blending components were 100% spontaneously fermented and inoculated by native microflora during an overnight rest in our coolship.
