Notes: Make Hay is a Saison crafted with Pilsner Malt, Ballad malt, Wheat Malt, Flaked Oats, Flaked Rye, and Acidulated Malt. A primary fermentation with authentic Belgian farmhouse yeast then several months of maturation in oak with our house wild yeast blend imparts notes of white pepper, tangerine, dry hay, and farm-like funk to this strong but delicate ale. Make Hay is fermented and aged in oak barrels for several months and then bottle conditioned.

Bottled on June 11, 2018.- This beer is approved to age

L- Pours a three finger headed beer that is a beautiful straw golden colored beer. Hazy as well. Very nice.
S- There is some sweet grain upfront, followed by oak barrel, fresh pepper, fresh apple, some citrus. Phenolic, with small hints of clove and banana. A tartness from the brett.
T- Flavor follows the nose. Fresh apple, rye, peppercorn, oak and citrus. Very quaint and nice. Everything it needs to be flavor wise. Pretty damn good.
F- Wheaty and thick. Smooth and pillowy. Decently dry finish. Pretty good.
O- What a yeasty, smooth, and earthy Belgian saison overall. Extremely well made, and an extremely good beer. I enjoyed every sip. The second beer I've had from Cellar West, and although it'll be a while until I have another of theirs I can't wait for the next.

a neat multigrain saison, now well mature in the bottle, one of the more evolved beers i have had from these guys, but also one of the oldest, so that makes sense. its a bit hazy, unsurprisingly, and really frothy headed, the white creamy thick head rises up and stays around the whole time, a soft pillow between my lips and the liquid each time i dive in. the aroma is a bit tart, a mix of that acidulated malt and the well established house yeast, some cool funk to it too, nice balance between the saison elements and the sourness, approachable but unique too. notes of lemon and white wine there, and then all the cereals in behind, including a strong crackery almost doughy pils malt element, and a bit of character from the rye. sort of like a strong grisette type here, cool grain layering. the flavor is consistent with the aroma, cool yeast out in front, tart but not super sour, lemony and limey and vinous, but also subtle enough to be drinkable, not too sour at all, and with some hay and straw grassiness and musty brettiness too. the grain layers are great, id love even more of what the rye adds here, and the acidulated malt doesnt take over, which it tends to do on occasion. fluffy feeling, wheaty, starchy, but relatively clean at the end. fuller bodied but still light somehow, creamy and dry, great carbonation. one of the more compelling beers i have had from these guys, and a rather fairly priced bottle too!

My wife and I visited their taproom and this was the only beer they had on 'tap', so we both gave it a try. This is the perfect hot weather beer; it reminded me of a pilsner mixed with a traditional saison. It had peppery and funky saison elements, but more subdued with lots of crisp pilsner-y flavor.
