a very mature and unique saison here, aged two years in oak and then refermented on apricots and plums, a neat and somewhat subtle mix of fruits here, but an incredible beer overall, one of the best i have had from cellar west, which is high praise because almost all of it has been exceptional! bronze looking golden color but dense and with some haze, not a ton of head from the bottle, but a pretty hue. aroma is killer, easily as funky and brett forward as any of their beers, really well developed, but its also quite sour, a bit more of a bacterial acidity than a lot of them have, which is likely just a product of its age, but its a nice counterpoint to some of the sweetness left from the fruit, particularly the apricot, which for me is ahead of the plums in the flavor. juicy and ripe on both, but a bit more of a persistent preserves thing from the apricots, the sourness keeps it in check. lots of oak casts a white wine vibe on this, which plays really well with the fruit too. complex to say the least, feels fancy too, a really professionally done beer from these guys, who just keep on getting better and better the more of their beers i am exposed to. not one of them yet that i havent really liked. id love to try some of the other cobwebs editions they have done. i could see this being amazing with fresh strawberries, something about the tartness and brett together with that fruit would be incredible. maybe next time?
