Found a bottle in a small town bar in belgium, what luck! Plenty of funk throughout, floral, hay, wood, apple and peach lightly accent the yeast and tart lemon. Medium body and carbonation. Even flavor is so vibrant, and even more the aromas are all both solo stars and part of a wonderful whole.

750ml capped and corked bottle. Stemmed glass. Pours a slightly hazy golden yellow body, one finger white head, good retention, a bit of lacing. Smell has that classic mildly astringent Fantome saison yeast, mineral, with a mild-moderate acetic acidity to it, big cobweb funk to it. Fair bit of lemony acidity. Moderate stonefruit flavours to it as well. Really nice funky peach and apricot on the palate, fairly fruity which was a surprise as it did not specify any fruit being added to it- but presumably there was no late fruit addition. The distinct Fantome saison yeast flavour adds depth of flavour to it, making it clear that it is more than just fruit and lambic. Medium bodied, good carbonation, wonderfully dry with stone fruit all the way through on the finish.

A 750ml bottle at Koelschip, bottled in December 2017. Poured into a Cantillon tasting glass.
Appearance: A light pinkish red colour with a one finger white head that dissipated fairly quickly, while leaving some sparse lacing.
Aroma: Fantôme, funk, tart, oak with light strawberry and raspberry.
Taste: Barnyard, Fantôme, light funk, light tartness with very light fruit and mixed berries.
Mouthfeel: Light bodied with light to moderate carbonation.
Overall: Quite nice with the Fantôme base having a strong showing, while there is only light fruitiness.

Sample at Mikkeller Beer Celebration Copenhagen 2018, Yellow Session. 2017 Vintage. Aroma has cellar funk, wood and lambic specific barnyard notes. Taste has intense funk and wood with medium sourness.

A: Nice fizzy head, blond color
N: Great funk, lambic, tart almost lemony, floral, zest and mild sour funk
T: Awesome, like old Drie Fonteinen, blended funk, tart lemony, sour funk pure lambic, awesomeness
M: Med bod, decent carb, fair acidity

A - Poured a very nice lightly hazy golden hue with a thin thin head.
M - Mouthfeel is really nice. Great oak and barrel notes, loads of funk on it, nice barnyard notes. Smells like an aged Drie Fonteinen!
T - Taste is similar to the nose. Not overly tart, not overly funky. There are some very nice bright green apples going on as well along with a nicely acidic finish.
M - Mouthfeel is great, lovely carbonation, crisp and bright without the acidity leaving the mouth flemmy.
O - Overall this, like probably every other Bokkereyder beer, is just masterfully crafted. Excellent blending going on here of young lambics in this saison. Just lovely.
