The colour is pale gold, the liquid clear. The three finger head is white and compact; it sinks slowly down leaving thick lacing on the glass.
The smell is fresh with distinct spicy notes of Saison yeast. Some dried apples and white pepper. It is a little light.
The taste got passing clean bitterness. Some salt and dried spices. Phenolic Saison-yeast flavours. Growing sweetness with some citric fruits. Light to medium body. The aftertaste is smooth with fruity sweetness, some apples and oranges. Figs, white pepper and some oriental spices in the finish.
The carbonation is strong; the small fresh bubbles are short-lived. The liquid is semi-smooth.
A Saison at 3.5% is of course lighter than a Saison at 7%. Still, this one does a good job.
