It is a wheatbeer, like volume one, with sumac, harvested from around my house and citrus (grapefruit), obviously not harvested from around my house. This beer represents a year so far of Wunderkammer beers and a return to some of the same materials I have worked with in the past, changed and re conceived.

Sumac adds a tart and bright flavor up front, reinforced by the citrus, but then a surprising depth as well into nuanced and light fruit leather flavors, all on a spritzy wheat beer canvas.

This beer is a tribute to the way in which humans understand things; hypothesis, experimentation, evaluation, over and over, until we reach what we know to be true, without regard for politics or prejudice.

Had on tap. I love wunderkammer's propensity for experimentation, and this beer was no exceptions. Sumac, yes sumac, grapefruit, lemon, wheat, peppery, and a nice tart finish. Body is full yet light and bright, deliciously so. The smell is a lot of grapefruit and sumac, but a fun combination.

Poured from a recently released bottle into the test glass.
A - Peach pulp color, the tiniest spheres meander toward the surface. Collecting in a thin ring.
S - Citrus element, orange rime, some green grape skin as well, followed by a really interesting earthy band, including a bit of pepper.With some warmth the sumac begins to shine.
T - Very much follows the aromatics, lovely mix of sweet and slightly tart tropical flavors, pineapple, orange reduction, the grapefruit addition is in the mix without being dominant. A bit of spearmint and light oak as well.
M - Soft on the palate, initial response is to the tart side, then a quick change of gears and fruity sweetness takes over, only to be kicked to the side by a delightful dry finish.
O - Another wonderful offering from a talented brewer, this wheat based beer allows for the very creative additions to be showcased. A real delight

Poured along side Volume One for science purposes!
Moderate pour yields a one and a half inch white head over a very slightly hazy light golden body with fleeting lacing. Nose of citrus, slate, flint, funk, ever so slight pepper, and a slight herbal quality as well. Taste is citrus, mostly lemon with grapefruit as well and finishing rather tart but not too tart. Nice feel and overall, a repeat of the ingredients of Volume One with both finishing nice and tart but each one taking slightly different paths to get there as newer version is just a tad softer in the middle (like me!), but still fairly well carbonated. Whew, it's a tough job, but somebody has to do it!
