after hearing nothing but rave reviews about the beers these guys make, i was so stoked to finally get my lips on one of them, such a cool idea for a brew too, with all these evergreen elements in the mix. i really enjoyed the beer, its thoughtful and clever, and quite well executed. what i like about it is the intermixing of the different botanical elements, some earthy and foresty, some sweet and oily and full of pine pitch, some more fragrant, gin-like, and pungent, while still another aspect of it is medicinal and ancient to me, a very cool bringing together related but distinctive elements from their surroundings. i did expect the beer to be a little more unique on the fermentation side, more wild, its bretty and tart, but predictably so, not as truly different as i hoped it would be, at least on the yeast side. notes of barnyard and hay, as well as lemon flesh and paper pulp, its cool, but ive been here before it seems like. nice refinement though, clean at the end even though its funky, oaky and vinous but not at the expense of anything else, and well carbonated. im sure this will age well and maybe develop into being a little more distinctive on the yeast side, but the beer overall is fantastic. i am thirsty for more from these guys, looks like super limited production...

Poured into a tulip.
The appearance was a semi-hazy burnt dark yellow to coppery orange color with a finger's worth of white foamy head falling off quaintly. Some trickling lace.
The aroma had a sweet funky lemongrass rolling over sweet cedar and pine tree needles and bark. Some hay/floral character hanging in the background.
The flavor combined a funky sweet to sour woody taste covering some lemon juice, lemongrass, mild vinous sour edge and white grapes. Mild aftertaste of lemon juice, lemongrass, hay/floral funky and pine bark.
The mouthfeel was about medium bodied with a fine sipping quality about it. Carbonation felt good. ABV felt on par. Good finish of lemongrass, funky grass, cedar and pine. Somewhat slick.
Overall, very nicely done American wild ale well worthy to come back preferably a tad earlier in Autumn for me.

A- 375ml thick bottle into a tulip with a slightly cloudy golden yellow body and a one finger frothy white head. Decent head retention and just a bit of spotty lacing down beyond that.

S- For this style of beer somewhat mild considering the other offerings from Wunderkammer. It gets a bit more pungent when it warms up and develops with the floral coming out. Funky sour lactic bugs, vinous sour grapes, lemon, horse and hay and then the additions. The fir and spruce are most prominent for me and thankfully not the cedar is not as big.

T- This is where the additives really shine as the fir comes out really fresh with that signature woodsy flavor you would expect. The beer is somewhat woody but comes off more sappy from the spruce, fir tips. The base sour is once again rather complex from Wunderkammer with bugs giving lactic, horsey, pasture, damp basement, vinous barrels, pale grapes, apple and a moderate tartness.

MF- Very much a light body with a fluffy and puffy consistency. The carbonation is at a medium level and it ends approaching sour.

Not quite the Bufo but still another offering from Wunderkammer that is worth going out and trying. A solid and funky sour base with the fresh woodsy flavors from the plants.

Poured from a 500 ml. bottle.
Moderate to vigorous pour yields a one inch white head over a semi-hazy, semi bright body with scant lacing. Head dissipates down to a thin ring in a few minutes. Nose of citrus, forest, and very slight funk. Taste of lemon, pine, and cedar. Very nice feel with a finish of a Vermont forest! Overall, yet another extremely fine and unique offering from Greensboro Bend, VT.
