375 ml. bottle.
Brewed January 11, 2019.
Moderate pour yields an almost two inch, creamy white head over a hazy, light golden body with sticky lacing. Nose of sexy funk; seriously. After warming a tad, the funk backs off slightly in deference to a bit of rose hips and hibiscus. Amazing! Taste mirrors nose and then some. Slightly sour, with the hibiscus and rose hips coming together wonderfully. I'm sure the yarrow plays an important role in this, but I've never chewed on Yarrow before!?! All ingredients work so well together. Exquisite feel and overall, this is the best Wunderkammer Bier offering I've ever had.

i like how subtle the rose hips and hibiscus are in this, its there, but its subservient to the floral and aromatic mixed fermentation profile, similar in that regard to other beers from these guys, and equally well refined. this seems a little less complex and evolved overall to me though, than some of the others, a quicker, fresher sort of fermentation, still funky and a little wild, with modest citric acidity, but without the dense okay richness a lot of them have had, and without the sort of infinite dryness i have gotten used to in some of them. the hibiscus doesnt color this at all, and the rose hips had a tang of there own, almost a cranberry fruitiness there, some lemon and lime from the bacterial side too, and a little bit of a white wine element at the finish. its refreshing, but its also kind of malty in a dry cereal and porridge density sort of way, nothing crystal or caramel in here, but some pretty protein heavy grains for such a light beer. thankfully the carbonation is big, and the finish is fast, this remains somehow refreshing. i dont think its quite as compelling as the best of their beers i have had to date, but its further proof that these guys are doing something special, especially in these saison and wild beer styles. this is neat for the summer time, and bring some unique perspective to familiar ingredients. nicely done!

Large pillowy foamy head medium retention thick lacing, hazy orange apricot colour

Nose nice juicy tart fruit, plenty of stone fruit, apricot peach juicy with mild tart, good bready funk, good farmhouse saison funk and phenol ester notes, but pretty much no hibiscus or rose

Taste more of the farmhouse funk, good Belgian saison funk, spicy phenols, little herbal leafy, into fruity esters with nice stone fruit, tart, little lemony citrus and light acidity, good funk, dry grainy finish with spicy acidic finish, dry slight flemmy acidic finish, very light floral rose/hibiscus notes

Mouth is med to lighter bod, bright foamy carb, almost over carbonated, fair acidity

Overall pretty tasty, good saison, nice fruit, but hibiscus and rose is almost nothing

Picked up a bottle of this at Hill Farmstead and split with JLindros.

A - Poured into a Kate the Great tulip a nice hazy golden hue with a thick white head that fades to leave sticky lacing and a thin blanket.

S - Big aromas of earthy grains and funky farmhouse yeast. Light lemon as well, great esters, however I don't really get any hibiscus or rose hips.

T - Taste is similar to the nose with loads of slightly sweet barnyard funk. Great funky citrus, nice light tart hibiscus and flashes of rose hips. Good lingering barnyard notes.

M - Mouthfeel is brightly carbonated, crisp, clean.

O - Overall this was a solid enough saison though I wish the rose and hibiscus were more prominent.
