Opened in late 2016, offering MN-only craft beer options. Menu spanned many styles, with approximately 30 different taps. Bottle/can selection had good breadth and depth. Planning for future growler/growlettes fills. Food was damn good as well. I will definitely hit this spot whenever my layovers allows.
Update 20210708 - After having wandered around SeaTac today for hours before my stop in MSP, I think my initial rating might be conservative. Stone Arch blows away any of the spots I checked out today in SEA in terms of beer options, food, and affordability. Its cemented as an every time pitstop when I'm rolling through MSP.

Visited on a recent work trip to Minneapolis and Saint Paul.
Tried the following:
Inbound Vienna Lager (draft)
Insight Splendid Moose (draft)
Both beers were drinking well. Also had a killer cheeseburger for dinner. Tap selection was good especially for an airport; like the fact that it’s all local crafters. Bustling gastropub atmosphere; I snagged one of the last available seats at the bar. Service was fine as the bartender was quick to grab my beers. My overall experience was above average, and I would probably come back.

Vibe: This place is located in Terminal 1 near the entrance to Concourse F. A good portion of the restaurant and island bar is actually juts out into the center of the terminal concourse, which has very high ceilings and skylights so it doesn't feel like you are eating in a cramped space.
Quality: Beers were served at the proper temperature in pint glasses.
Service: I sat at the bar so service was quick and they had a couple of bartenders working at the time of my visit.
Selection: This place has a beer selection that rivals craft beer bars in Minneapolis and is by far the best bar I have ever been to in an airport. The menu is features only beers from Minnesota and I counted a total of 32 beers available on-tap and 34 available in cans from the following breweries: 612 Brew, Bald Man, Bent Paddle, Big Axe, Blacklist, Burning Brothers, Castle Danger, Duluth, Excelsior, Fair State, Fulton, Headflyer, Inbound, Indeed, Liftbridge, Lake Monster, Lakes & Legends, Lupulin, OMNI, Shakopee, Shell's, Steel Toe, Summit, Surly, Utepils, Urban Growler, and Waconia. Beer flights of four 5 oz. beers are also available.

For an airport bar, this is about as good as it gets. Over 30 MN local drafts. They offer flights as well which is a plus. Great way to kill some time on a layover.

Visited around dinner time on a Wednesday evening. Place was packed.
V - This place is all about the beer. Great music. Still an airport bar. Maybe the best beer bar in an airport I have ever visited. 4.25
Q - All beers I saw were served shaker pints. Convenience & practicality over rightness. 3.75
Ser - The bartender was helpful for both pros and rookies. Great attentive bartender. 4.5
Sel - A fantastic selection of almost exclusively Minnesota beers and having all these Minnesota beers is great. Lots of stuff in cans more than half in cans.- 4.5
F - I had the bone-in pork chop. They over cooked it. Otherwise a fine meal. I'll give them another chance. 3.75

I'm a road warrior and if you like craft beer, this is probably one of the best airport bars in the U.S.
Drinking a super fresh Surly Todd the Axman as I write this. It's not fair to judge this place against your hometown favorite, instead judge it against any airport bar that's BMC. All of their beers are local. Who cares about the food....

The atmosphere of Stone Arch...well, it's in the main area of terminal 1 in tge MSP airport. For what it is it actually is quite relaxed, and even somewhat inviting. It is billed as the Minnesota craft beer location in MSP. It does have Minnesots craft beer, but some of the choices are pretty bad. There are ten taps: one is 612,one is 56 Brewing, one is Inbound. Do we really want these breweries representing Minnesota craft brewing? I don't. On the bright side they do have a couple Surlys, Summit EPA (which is a historic staple in MN craft beer), and the light beer is a Schell's Light (I really appreciate that). Quality was on point with the Venture Pils I had. Service was fast, and friendly. Overall, Stone Arch is a decent way to waste some time while waiting for your flight. I just wish they'd change out a few of the taps.

Stopped in here on a flight out to CA. Its in Terminal 1 it's a large oval shaped open air bar/restaurant. The bar is in the middle with tables on the outer edge of the circle, its actually a very big place. I sat at the bar it looks like 2 dozen or so taps on MN brews, in many different style's saw alot of brews that looked new for the named brewery, have never seen them on tap in TC. Food looked just okay/good twas on the pricey side but this is the airport. Definatley a place to stop if you have a layover or just arrive early.
