Our anniversary beer is a blend of some of the first beers we brewed here at the brewery. Our first beer we ever brewed here in November of 2016 was a spontaneously inoculated coolship beer. This was a turbid mash consisting of two-row barley and raw wheat, it then was boiled for 3 hours with aged hops.
The other part of this beer comes from one of our oldest oak fermented oak aged saisons at the brewery, brewed in February of 2017 this beer displayed some of our favorite characteristics of a saison. It was fermented with our house saison strain and our wild cultures captured here at the brewery.
This beer is highly carbonated and dry with a slight spice from the saison yeast and light acidity with alot of brettanomyces character that shines in this beer.

a really beautiful beer, awesome packaging, great depth of flavor, and mature and unique from a yeast standpoint, an advanced and professional, even masterful blend, how are these guys not getting more attention. this was up there with the native estate for my favorite beer we had in here. golden and bright in the glass, with a little haze to it and a lazy white head. it smells of white wine, mature oak, enormously fruity brett, and some truly wild character, almost lambic-esque in its depth and tang and capacity to make my mouth water like crazy. i believe at least part of this was coolship beer, which makes sense, the funkiness is very lambic type to me, truly wild, not a familiar culture, but really successful. i get the no alpha hoppiness too, aged hops likely, this is quite traditional, at least in one of its threads. light golden wheaty base is earthy and rustic at the same time, and here i pick up some more conventional saison yeast strain too, light green apple and pear esters happening, then tons of brett funking it up and drying it right out at the end, a white wine sort of vinous acidity there too and the mellowing oak. this is distinct, delicate, and complex, its timeless and professional, and its absolutely fantastic beer. seems weird that nobody is talking about these guys with beer this good...

Hazy brassy orange, a finger of foam that settles quickly to a skim. It breaks after the first sips, leaving behind minimal spotty lacing in the glass.
Oak, dill, citrusy lemon and lime aromas with some light acidity.
Tart and tangy lemon and lime zest, grapefruit, pepper, and oaky vanilla lingers in the dry finish. Crisp acidity, not overly sour, medium bodied with soft but persistent carbonation. Lots of character, citrus forward and expressive oak. Overall this was really nice, the perfect beer to celebrate White Rooster’s 1st anniversary.
