Barrel aged saison
Barrel fermented and aged with our house brettanomyces. Slight citrus/stone fruit fruit characteristics with a mild peppery spiciness. Brettanomyces funk becomes present as it warms up in the glass.

another cool old brett saison from these guys, paper label i assume its from the original location, although it is listed under both locations now, and i think it has been made more than once. in any event, this one has held up a little better than some of the others i have had recently, more effervescent, brighter, and with a lot of cool funk with layers of white wine wrapped up in all the oak, a tons of stone fruit, dried apricot, fresh peach, a little white pepper, sherry, old brett, its great. some of the older ones have been pretty oxidized for whatever reason, but not this one, or rather way less of that, the brett is more active and invigorated still, and i appreciate that. there is some sweetness in this from the grain, light toffee to me, and a nutty toasted wrinkle too, maybe slightly deeper than some of the others. the tartness is pretty low here, lots of barrel and fermentation character but not a lot of sourness, no vinegar happening, enough room for the grain, perhaps not as radical as it could be, not as unique maybe, none of the old ones have totally floored me, but this one doing better than others and it was fun to share with the boys. also been super cool drinking through some of these beers i never thought id get a chance to try from them.

Bottle: Poured a clear orangey color ale with a medium size foamy head with light retention and minimal lacing. Aroma of tart and sour notes with some oak presence and light funky notes. Taste is also a mix of light funky notes and oak presence with some tart notes and minimal acidity. Body is about average with medium carbonation. Enjoyable tart saison with good enough complexity.

375ml corked/caged bottle served in a small Cantillon glass. Batch #2.
Pours clear golden with a smallish head and respectable carbonation. Looks nice. Smell is primarily funky with some significant tartness. Lemons. Solid saison aroma.
Taste is pretty much straight in line, but with a nice little fruity kick of sweetness to offset the tart and funk.
Mouthfeel is light and effervescent. Overall, nice beer.

Batch #3
Pretty closely follows what I wrote above, but strong nectarine vibes. Very nice.

This is brewed with Brettanomyces, but apparently not with an lactic bacteria since it's not at all sour. Pours a clear amber color in the tulip glass with a decent foam.
Drier than most Saisons, though pleasantly malty with a sweet hint. Light body. It's tangy with fruit-flavored acidity but the Brett is clean and very mild. There is jus a whiff of the funky barnyard. Overall this tastes like a diluted rustic cider with a squirt of yeast from the bottom of the Hefeweizen bottle.
Light, refreshing, and spritzy, with a faint bubblegum aroma and some grains. Easy to drink though not memorable. On tap at The Noble Fir in Ballard.
