i have been dying to come check this place out since they opened it up, turns out they are making beer here too, inside a cool old warehouse looking space. they have done a nice job dressing it up, exposed yellow brick, dim lighting, wood accents and tables, and a really long bar giving a cool beer hall feel to the narrow space. various tanks and equipment visible from the back. the place is absolutely popping on a saturday night, we were lucky to find seats at the bar. i have love off color beer since it first came around, and i was stoked to see they had such a big selection of beers i had never seen from them before, including some really heady bottle selections. the beer is somewhat expensive here, especially the large bottles, but with these guys you really do get what you pay for. we had quite a few here, loving the house lion and the bottle collaboration with jester king. all of them were awesome, well refined, and innovative though, certainly some of the coolest beer in the city if not beyond at this point, i really love what they are doing with yeasts! the service was solid for how busy they were, a little impersonal, but thats to be expected with the density in here. glassware was awesome, there is attention to detail everywhere in here. i would love to check this place out at a more mellow time, but its still worth it to get in here whenever, the beer is incredible and they have even more stuff available to go. this was a highlight of our chicago trip for sure! near the top of my list to go back to when i return to chicago!

Visited at 1pm on Easter Sunday for the tour. 12 seat bar in th me back of a Lon narrow room. Communal tables behind. Industrial minimalist, brick walls and wood floor. Folk rock music soundtrack. 15 of their own on tap. They like their wild fermentation. No IPAs here. Pricing is on the high side, but wild fermentation takes a lot longer, so the prices properly reflect that. Very chill when I was here, but it likely gets loud when busy with the low ceilings. Charging plugs for devices under the bar, always a plus

The Mouse Trap is in a cool old building and features the usual modern day, slightly industrial look. Here it is tempered with wood and some beautiful tile work. I really like the concrete table tops.
The quality is as good as it gets. These folks know how to make beer and how to blend flavors.
Great service at the bar. Friendly, fast and helpful.
The selection is very good. Around a dozen Off Color beers on tap. During our visit, there was a lack of dark beers but that is minor.
Love this place.

I visited the Mousetrap while in Chicago last weekend for my anniversary. This is their taproom separate from the main brewery, but they appear to brew beer on-site here as well based on all the equipment present. They also have a foeder room next to the taproom, which is awesome to look at.

I ended up having about 5 different beers here, each delicious and weird in its own way. Off Color definitely is doing some adventurous stuff, including a couple historical beers brewed in collaboration with the Field museum. When I visited, they had 16 of their own beers on tap, plus a decent bottle selection of their beers. They also have a few cocktails on the menu along with some guest bottles including a cider.

Service was good and the staff behind the bar seemed pretty knowledgeable about the beers. I would absolutely return to the Mousetrap if I make it back to Chicago any time soon.

The place to go,if you want to drink Off Color's beer. The taproom is cool. It was super packed. I want to love their beer, I really do, I just don't. I've tried what I can get my hands on here in Ohio and I was hoping some fresh beer would change my mind. It didn't. It's still a cool place to check out in a great beer town.

I'm going to defer much of the description of the Mousetrap to Emerge077 who, among other things, specializes in places. (He also beat me to the punch by a month.... How'd he do that? Especially when I was eagerly anticipating the opening.)

Let me add that the Mousetrap has 3 guest taps. This adds more mainstream variety when you consider that Off Color is, well, not for everyone.
Also, The Mousetrap offered five 750ML bottled American Wilds; an exclusive that you can only drink on the premises with friends. One of the five is a collaboration with Miller, for which Off Color worked on them for two years. Their description goes like this: " Tasting notes... well have you ever had High Life? This beer is a lot like that, except different." It is good for me to know that Off Color still has its sense of humor... even though a Miller collaboration and this well-done taproom is a step up from their humble start in a borderline-ghetto warehouse that was converted to a brewery several years back.

Which brings up the hip, gentrified neighborhood where Mousetrap is; known as Goose Island (yes, the now famous AB-owned craft brewery has its original brewpub two blocks north of Mousetrap on Kingsbury.) Anyway, Mousetrap is one of the neighborhood's last repurposing (a 19th Century building that last was a paint warehouse.) Everything else around has been torn down and built much higher or has been renovated. An old manufacturing district's transformation completed.

I wonder how Off Color will pay the rent... but I hope they can. I am a big fan. They are my 4th most rated brewery and almost all ratings have a review. This is unusual in that I've been drinking crafts for 20 years; ten times longer than when I had my first Off Color experience. So I clearly prefer their talent... and sense of humor. Visit their website, then visit Mousetrap. You are in for a treat.

Location and storefront are about as nondescript as it gets. Great vibe inside though, with subway tile accents and a ton of seating configurations. I'm always a sucker for vintage/cellar options at a taproom, too.

The new Mousetrap taproom has a laid-back cozy vibe with a low slung ceiling and long L-shaped bar in the back. Counter up front for to-go beers, swag, and coffee.

Hexagonal honeycomb tiles behind the bar continue along the back wall and decorate the restrooms where they depict 2-D underwater ocean landscapes. Basically like Off Color labels come to life, just with fish instead of mice. Seating at long communal tables to the right of the bar, some easy chairs past the to-go counter, and smaller tables up front by the windows. Exposed brick walls, dim lighting, cool music playing on custom speakers. Views of the brewhouse to the right through large windows and the barrel room with a six pack of large foeders.

Lots of taps, at least a dozen house beers, plus a bottle list and a rotating cocktail list. Really loved the "Sure, You Can Have an IPA" cocktail with gin, tropical fruit juice, and a hop tincture.

Service was great, they had servers taking care of all the tables and they were really friendly and on top of things.

It's going to be a great place to hang out, not far from the North/Clybourn red line.
If you're looking to order in, Pizzeria Bebu is great, and Sully's House used to make a nice lamb burger.
This neighborhood used to be fairly shady a decade ago, many vacant lots and warehouses in the shadow of Cabrini, with a burgeoning nightclub district that included Crobar, Zentra, and Dragon Room. Today it's all been torn down and sterilized. I like to think Off Color is bringing back a little bit of that hidden speakeasy vibe to this particular part of town.
