This Fruited Sour is brewed to mimic an iconic NY dessert, cheesecake! With help from Cheesy Eddies Bakery, we were able to recreate flavors of the decadent treat. We then conditioned the beer on cherry, raspberry, strawberry, a hint of coconut, and flavors of cheesecake.

Mortalis usually isn’t the brewery to go full on Pastry Sour, but they’ve done it with this one. I don’t even like cheesecake, but I was intrigued enough by this one to buy it when I saw it pop up on Tavour. Let’s crack it open and see what it’s all about

Pours an opaque reddish purple with a finger of pinkish white head that quickly fades to a thin ring and leaves minimal lacing

Yeah, this is definitely a pastry, but a well balanced one. I’m picking up on aromas of sweet cherry, graham cracker, brown sugar, jammy raspberry, lemon zest, vanilla bean, light blueberry, and honey

Things get even sweeter in taste, bringing in the cheese part of the cheesecake a bit, but for some reason I still really dig it. On the front end of the sip I’m tasting tart cherry, graham cracker, jammy blueberry, cream cheese, lemon zest, vanilla ice cream, and light orange juice. The swallow brings notes of tart cherry, jammy raspberry, honey, cream cheese, graham cracker, pie crust, brown sugar, lemon zest, and light orange juice

A medium body pairs with gentle tingling carbonation, resulting in a smooth beer. Finishes surprisingly dry despite the sweetness

I feel like I shouldn’t enjoy this as much as I do, but it’s damn good. Certainly unique

Can into Nucleated Tulip
Look: muddy dark purply red, pouring a pink 1 finger head which dissipated into thin ring with lacing
Smell: like a mixed berry cheesecake. Very sweet with vanilla and graham cracker , but a hint of citric acid in the background. Strong nose
Taste: like a berry laden cheesecake. Tart berries upfront, followed by sweet vanilla graham cracker. Touch of alcohol before a mellow malty finish with hints of berries
Feel: med body with moderate carbonation. Some muddiness from the purées used
Overall: nearly perfect. Loved every bit of it

Served in a tulip

Interesting appearance. The beer poured thick and gloppy, like a fruit smoothie. Deep violet in color. Initially, there was no head, but after half a minute or so, the bubbles reverse cascaded to form a sticky, soapy looking crown that slowly dissolved. There was no actual lacing either, but a wall of fine sediment coated the glass from top to bottom.

The aroma was outstanding. Winter spice notes came through big time. Cinnamon was most noticeable. Good dose of nutmeg too. Sweet lactose and vanilla notes were also detectable. Berries were apparent as well. Raspberry was most prominent initially. Bit of strawberry too.

The flavor profile was also fantastic, but the spice notes were definitely most subtle here. Big fruity presence. Strawberry dominated. Loads of raspberry as well. Nice balance of sweet and tart. Winter spice notes appeared on the back end, but they were definitely more subtle here than in the nose. More lingering berry-like tartness in the finish.

Fantastic rich, full bodied mouthfeel. Pulpy and thick, like a fruit smoothie. The liquid contained a super fine, zippy effervescence that fluffed up really nicely on the palate.

Although this beer was supposed to mimic a strawberry cheesecake, it more closely resembled a spiced berry cobbler, and that was totally fine by me. Mortalis Brewing’s fruited sours are not only really creative and highly unique but also amazingly well crafted.

These Mortalis fruited sours are off the charts. This one has all the makings of cheesecake without the sugar bomb that some places seem to go with these ideas. Highly drinkable and enjoyable. Balanced and hits the mark with a nice amount of acidity.
