they called this one a lambic, or said it was lambic inspired or something, and for me, on those style grounds, its not quite there. not to say it isnt a nice and complex sour beer, but to put this in the lambic realm is a reach for me, i think maybe its a bit young and might appear more like classic lambic over time, but for now its a mislabel, no matter how its made, spontaneous or not (and im not sure if it is). a little redder color than most lambic i have known, beautiful white bubbly head from the tap, and looks sharp in the nice glassware the use in their taproom here. aroma has some obvious acidity right up front, like a fruity vinegar vibe to it, some oak tannins and vanilla notes, and a lot of wheat obvious, quite fresh, bretty too in there, but less mature than it could be. the flavor is nice for awhile, notes of peach and apricot, white grape and even lemon, with the bacterial aspect really nice and the sourness clean and not too intense, but when the brett kicks in, it has the cheerio dust finish rather than farmy funk, and it seems kind of amateur and young rather than mature and wild. i get some neat vinous and cherry notes late, and a lot of wood on the finish, but its the fermentation profile, not the rest of the beer, that says to me its not really lambic at this time. i didnt dislike it though, and think it will likely age and develop pretty well. this place is awesome though, and all the beer and food was great. definitely a place to add to your list when you are in the area!
