Barrel-aged, fresh-hopped native yeast ale.
In September 2020 we hand-harvested fresh Sterling hops, added them to hot wort in our coolship, let it cool overnight, blended it with yeast from spontaneously fermenting beer, blended in some brett beer, and then let it age in oak barrels for two years, before dry-hopping with Saaz and bottle conditioning with honey.

This pours a lightly hazed amber with a modest bit of foam in the Chimay chalice. The smell of honey lingers in the nose. A wild and fruity and quite acidic trip that is like a Saison gone to the barn and back. Some woody notes and an astringent finish with distinct bitter aftertaste. You have to give these people credit for taking such pains and such specialized equipment for these brews. From the 500 ml bottle dated May 11, 2022 purchased at the brewery tasting room.

Also good to know is the key to the name and the brewery from byrdseed.com: "On first glance, it seems that “old” is an adjective and “man” is a noun, but the sentence immediately falls apart. Then, we go back and realize “old” is a noun and “man” is a verb. This is called a garden path sentence."
