Barrel-aged 35 months in BLiS Bourbon Maple Syrup barrels and Henry Mckenna 11yr Old Bourbon barrels. No adjuncts.

Bottled 5/26/21. Bottle to snifter.
L: Pours pitch black with loads of very fine brown floaters. Neither head nor lacing.
S: Dark and roasty with notes of coffee and bitter chocolate. The sweetness of the bourbon barrell is also there.
T: Strong notes of maple syrup up front. Hints of coffee, dark chocolate and vanilla. Not as roasty as its smell, rather sweet and slightly bitter.
F: Full and creamy with a low carbonation. Boozy as it warms.
O: A tad too sweet, but overall a fantastic stout that works really well without any adjuncts. Sure, the barrell notes are quite strong, but they are balanced very nicely without being too overwhelming. I'd call this a textbook example for barrell aging without the influence of any adjuncts in the brewing process. Superb beer with a perfect mouthfeel.

This one pours a very dark black color, with a small head, and not much lacing.
This smells like roasted malt, spicy oak, leathery bourbon, bittersweet maple, melted milk chocolate, caramel, and vanilla.
This is tremendous. The two barrels are quite different – the maple bourbon barrels obviously add some sweetness, but it’s overall not really cloying. The bourbon barrels add spice, roast, char, marshmallow, caramel, and vanilla. The base stout presents as very chocolatey, decadent and sweet.
This is quite thick, rich, and sweet, with a touch of boozy warmth. It’s still pretty drinkable despite the intensity.
This tastes huge, but it’s done quite, quite well.

This is tremendous. The two barrels are quite different – the maple bourbon barrels obviously add some sweetness, but it’s overall not really cloying. The bourbon barrels add spice, roast, char, marshmallow, caramel, and vanilla. The base stout presents as very chocolatey, decadent and sweet.
This is quite thick, rich, and sweet, with a touch of boozy warmth. It’s still pretty drinkable despite the intensity.

Pours a viscous midnight-black body capped with a finger of deep tawny foam; decent head retention leaves a blank cap, moderate, creamy collar, and a bare-minimum display of lacing holding tentatively to the walls of the glass.
Aromas of rich brownie batter leave residual chocolate washed in charry maple undertones, with accents of dusted chestnut into bourbon and roast further encompassing a closing impression laden with more prominent maple, sweet toffee and burnt butterscotch.
Taste imposes dark chocolate with a deep brownie subtext, expanding to vague black cherry and dark diner maple syrup coursing through the mid-palate; a subtle char into bourbon vanillins on the back end culminate to maple hard candies on the finish.
Mouthfeel features a body on the fuller side of medium accompanied with a subtle fluff of moderate-low carbonation; silky, progressively creamy textures are cut with a spike of warmth over the mid-palate, largely dissipating to a quasi-sticky character on the back end and smooth, prickly glide through the finish.
Fragrant maple inflection spills fresh Aunt Jemima vibes through a robustly roasty brownie crust base and rich, oaky bourbon accent; the maple veers saccharine at times, though the end result remains a balanced display of warming malt and adjunct sweetness.

Pours jet black, just a tad thinner than black ink. The thin head head that does develop is dark brown, small, inconsistent bubbles. What you’d expect from a beer that spent nearly 3 years in barrels.
Ooooh, you can smell it as soon as it’s poured. Burned brownie edges, maple, dark roast coffee, slight charred wood smoke.. it’s a Maillard reaction in a glass.
Flavors of rich dark chocolate, tons of oaky vanilla, maple, espresso brownie batter, umami smoke, super bitter finish. It’s the best that a bourbon barrel can give you. It was the perfect oak, the perfect, toast level and the perfect age time. This beer is an unwavering trust in your barrels. Any other ingredients would have ruined this beer. It can stand up the best in a blind tasting.
So so complex.. I can only hope there is more to come like this from Evil Twin. Their Great Northern Series should sell out in seconds. They are crushing it. Brilliant brilliant bottle of beer. I don’t want it to go away, but I’ll gladly drink the whole bottle.
