Created with our friends Marika and Aaron from Scratch Brewing Company in Ava, IL. This Munich-Style Dunkel collaboration showcases the artistry of foraged brewing. Marika and Aaron hand-gathered fig leaves and sweet clover, adding distinctive botanical notes that complement the beer's rich, malty backbone.
This dark lager pours a deep amber-brown with a creamy tan head. The foraged fig leaves contribute subtle earthy, vanilla nuances, while the sweet clover adds delicate honey. The result is a smooth, medium-bodied Dunkel with complex layers of roasted malt sweetness balanced by the unique terroir of Southern Illinois botanicals.

16oz can from Tavour. Almost clear, dark brown pour, minimal layer of beige head. Roasted malt aroma, nutty. Taste opens with a prominent roasty bitterness, burnt toast, coffee, woody. Bitterness hangs tough throughout the whole session.

Clear dark brown. Nice malty and roasted malt aroma and flavor. Great balance with no sweetness. Medium to light bodied and fairly smooth for 5%. Fantastic example of the style !

Appearance: A three fingered ecru head builds above the clear tea colored liquid; good persistence as the head fades to a film leaving lacing that coats the glass
Smell: Earthy, slightly roasty aromatics, caramel malt with a touch of vanilla
Taste: The earthy and slightly roasty malt flavors are tempered by the sweeter honeyed caramel tones; a but of lager twang, after the swallow, but far less than typical; a touch of vanilla in the aftertaste
Mouthfeel: Light to medium body with moderate to high carbonation
Overall: Munich dunkels were one of the original styles that got me interested in craft beer so it sure is nice to see a well-executed version coming from Millpond
