Our Dry-Hopped Farmhouse Ale uses Lemondrop, Summer, Rakau and Bullion hops which are a mixture of US and New Zealand hops. While Lemondrop is a newer hop, Bullion is a vintage hop which was used for bittering lagers in the 1950’s. Even with this mixture of hops, the flavor is very fermentation forward which allows the fruity flavors produced by the yeast to really stand out. They range from tropical and citrus fruits to earthy, spicy cedar notes.

the hop profile of this beer is amazing, all the juicy tropical mouthwatering new zealand hops, but not the nelson profile i am used to, something new and different, and it suits this simple but well made base saison expertly well. it has a french saison strain in it i think, something similar at least, tangy and a little sharp, but mellowed by patience and a whole heap of wheat malt. as refreshing and drinkable as it would probably be on its own, for me, what really makes this beer special is the hops. its not hoppy in the bitter sense, or even in the oily west coast sense, its just boldly flavored by these unique hop varietals and it brings out the very best elements of the base beer. the fruitiness of the yeast finds a partner in the hops, as does the fresh cereal grain, its just really comes together very nicely. there arent a lot of beers out there that do what this one does for me, and i think these guys deserve more credit from beer geeks in general than they tend to receive. every time i have their beer i come away with a new respect for their operation. this one is awesome in hot weather.

In a week where I had probably 300 individual beers (Savor week) this was in my top 2-3 including what I tried at the event.

On tap at Smoke and Barrel.

Appearance: Clear golden yellow/light orange. Slight unfiltered hop haze.

Aroma: Out of this world. Bright and juicy aromatics from the Centennial and Mosaic. Huge notes of tropical fruit and citrus with background hints of wood and pine. All the hop character of a big IPA mixed with the dry, fruity, slightly funky qualities of the farmhouse yeast.

Taste: On par with the aroma. Outstanding. Dry palate with nicely balancing malt character that never intrudes. The hop flavor intensity of a huge IPA without a palate wrecking bitterness. Hop flavor comes in big waves with bright citrus and tropical flavors leading the charge. Hints of ripe berry with an underlying resiny character. Beer dries out in the finish but a nice citric fruitiness lingers.

Feel: Drinks appropriately for the style. Light to medium bodied. Well carbed. Lots of hop oil. Never too lingering. Never cloying.

Hope this version happens often. Enjoyed last year's iteration (Lemon Drop, Rakau, Bullion, etc). This year's (Mosaic, Centennial) is an absolute fucking home run.

Big pine, resin, and grapefruit in aroma, accented by soft notes of honeysuckle. There's a base of barnyard funk and light phenols. Very hop forward.

Flavor reveals a very grassy base, contrasted by sharp citrus, muted apple, and floral and herbal notes. That phenolic character comes back as bubblegum and pepto toward the finish, which is oddly sweet.

As American brewers slowly command the taste of traditional, historic and classic styles of beer, Schlafly throws their mash tun into the ring by using a blend of new pacific northwest hops, New Zealand hops and the noble hops of Europe for a decidedly IPA tilt to the rustic farmhouse flavor.

Hazy golden and simply looking yeasty and doughy to the eye, the tang of acidity and the brilliance of hops captivate the nose upon the first sniff. Citrus, herb, orchard, vinous and tropical aromas float just above the initial taste of fresh-kilned pilsner sweetness, breadiness and husky grain.

As the hops unfold across the middle palate, its perfumy bouquet turns juicy and tangy with pink grapefruit, under-ripened orange, a host of green berries, pineapple, passionfruit, lemon and tangy white grape are counter to the grassy, leafy, acidic and peppery yeast spices that balance the fruit. With the sweetness trailing and the dryness projecting, the ale trends dry and drinkable late.

The beer's light sweetness and bread textures are lifted by the spirited champagne-like carbonation, allowing the medium-bodied beer to register much lighter on the palate. This gives a rise to the beer's peppery bite, spicy hop bitterness and mild acidity for a refreshing close to the session with echoes of tangy citrus and white wine.

12oz bottle. Poured out a cloudy, golden amber color with a small, white head of foam. It smelled of spices, yeast and bread crust. Sweet toasted caramel and fruitiness with a peppery spicy bite.
