Biased review insofar as I'm a hefehead, but I really adore Bubbler. Last year I made one of the hardest decisions of my life after commissioning a friend to help me blind-test it against Dancing Man. 10/10 would recommend with banana bread. By far my favorite branding of any brew, period--I feel all warm and foamy inside.

DATE: May 5, 2018... OCCASION: having experienced our first Gender Reveal, I take a time out from Cinco de Mayo to refresh with a suitable warm-weather companion... GLASSWARE: Weihenstephaner weizen... pours--my goodness, the bubbles!--seriously, this is two-thirds head though I tilted with care... that head is snow white, thick and frosty... its body is sallow gold, slightly veiled and with sparse bubbles... rich bubblegum and banana, lemongrass, and light yeasty esters... singular in its suggestion--a straight-up German hefe, though it looks a bit filtered... sips thinly, with a malty backbone that allows for swift repetitions... flatter than expected, though I know this came fresh, courtesy of Jarrett's travels--thanks, friend!...clove is prominent, taking the bubblegum's challenge and holding its own... the banana is there too... this checks off all marks on the quintessential hefeweizen wish list... can't ask for much more than this from the style, though it doesn't have a spiciness that separates it from others I have had... refreshing, crisp with wheat, and finishes cleanly...

Got in a trade with The-Adjunct-Hippie. 12 ounce bottle into weizen glass, best before 11/11/2017. Pours moderately hazy/cloudy golden yellow color with a 2-3 finger fairly dense and fuffy white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a good amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big banana, bubblegum, clove, peppercorn, lemon, pear, apple, wheat, cracker, biscuit, herbal, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, pale/wheat malt, and light-moderate earthy hop notes; with great strength. Taste of big banana, bubblegum, clove, peppercorn, lemon, pear, apple, wheat, cracker, biscuit, herbal, grass, and yeast earthiness. Light-moderate peppery yeast spiciness; light herbal/grassy bitterness, and wheat tang/tartness on the finish. Lingering notes of banana, bubblegum, clove, peppercorn, lemon, pear, apple, wheat, cracker, biscuit, herbal, grass, and yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/spicy yeast, pale/wheat malt, and light-moderate earthy hop flavors; with an awesome malt/bitter/spiciness balance, and zero cloying/astringent flavors after the finish. Moderate increasing dryness from spiciness and carbonation. High carbonation and light-medium body; with a very smooth, moderately crisp, creamy/bready/grainy, and fairly sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 4%. Overall this is a fantastic hefeweizen! All around outstanding complexity, robustness, and balance of fruity/spicy yeast, pale/wheat malt, and light-moderate earthy hop flavors; very smooth, crisp, and refreshing to drink. Outstanding well rounded German weizen yeast complexity. Probably the most banana heavy American made example I've ever had. A highly enjoyable offering, and spot on style example.

Appearance – One finger head on a slightly hazy yellow body.

Aroma – Wheat malt, peppery, slightly grainy. A little bit of apple afterwards.

Taste – Wheat malt, peppery, a little bit of clove.

Mouthfeel – Well named as it is very well carbonated and quite bubbly.

Overall – A lively and fun beer to drink.

look - slight haze pale copper color with a slight white head
smell - grainy, wheat and some clove possibly some citrus in there
taste - a lot like the smell but slight banana
feel - medium body but to much carbonation
Overall - still a great beer

Was gifted a bottle of this from my neighbor -- been in the fridge for a while, thought I'd give it a try.

Poured into my Libby Weizen glass from the typical NG brown longneck... with no real date info.

L -- Hazy (after the Hefe-swirl was performed) gold with peach-colored highlights and a dense, pillowy white head that slowly settles to a thin layer.

S -- Could smell bubblegum at arm's length in the pour. Bready Pilsner malt and grainy wheat up front, bubblegum and clove back.

T -- Bready malts up front followed by graininess and spicy clove. Tart fruitiness from the yeast rounds out the finish and spiciness from the yeast and hops hold up the aftertaste.

F -- Mouthfeel is soft and creamy to spritzy with a light-medium body.

O -- Another fine example of Hefeweizen from NG. Sure, most Hefeweizens are all about the yeast, but you still need a great mash to get that good balance of barley and wheat character, this brew doesn't disappoint.

This beer pours a brilliant golden color and is topped with an inch of off white head that leaves no lacing.

It has a spicy nose. I get banana and clove.

It has a banana and clove taste and a clean finish.

Moderate to thin mouthfeel

This is a solid American version of a hefe. It doesn't stand up to the great German ones though.

Poured from a bottle into a wheat beer glass. Pours golden yellow orange with a fluffy white head. Smells of banana and wheat. Tastes of banana and wheat, very nicely balanced. Beer is light bodied, very easy drinking, good carbonation. Overall, a very good beer.

12oz bottle. Murky yellow body with a bubbly white head. Huge hefe yeast aroma with banana, bubble gum, and clove with faint citrus. Fruity flavor (maybe overly fruity) with notes of lemon zest, biscuity malt, and yeast esters creating clove, banana, and bubble gum. Effervescent light-to-medium body, finishing with some lemon zest lingering. Not a bad hefeweizen. The aroma is the best thing about it, but its flavors falls short in comparison to its German counterparts in my opinion.

Appearance: Pours cloudy and goldenstraw colored, with a tall but fizzy head; nice retention and a few clumps of lacing linger

Smell: Spicy clove/nutmeg and tangy wheat tones more prominent than the banana here

Taste: Tangy wheat dominates the front, with the spicy clove tones developing; just a hint of banana peaks through, in the middle; caramel sweetness intermingles with the banana, after the swallow, though the wheat and spice remain prominenet

Mouthfeel: Light to medium body with buoyant carbonation (a bit too bubbly); lacks a creamy character

Overall: An unusual take on the hefe style; mouthfeel issues aside, it is rather enjoyable

Pours a huge head, easily over two fingers even with a controlled pour, brilliant bone white, while very airy and whipped up keeps a nicely even surface, the lacing very large splotches with just below average stickiness. Mild haze to the pure gold colored liquid, randomly scattered large bubbles, no tight beads. The nose leaps forth from the glass with bubblegum, banana, clove and a solid amount of apricot, pear to apple fruit scents, as it warms there’s additional pepper, more pronounced wheat as well as mineral water notes. Medium-bodied, fairly dry and stern even as the carbonation has it frothing across the palate. The dryness prevents a round mouth feel from really filling it up though. The flavors come close to exactly replicating the nose with strong emphasis on bubblegum, clove and banana. More mixed orange to grapefruit citrus and more yeasty than wheat-driven. The apple, pear, apricot, peach fruit pairs up with golden raisin and fig, this without any real sugariness accruing. Unavoidable retronasal perfume fills the mouth after swallowing. The flavors more simple than intense which appears to be the intent behind this beer in the name of higher drinkability.

A - Hazy yellow-gold body, fat large bubble white head, lots of bubble, and definite ropy lacing.

S - Strong yeast nose, banana and bubble gum.

T - Huge explosion of bubble sugar and banana flesh, sweet and lush, followed by a subtler grain sourness, that trails off with lingering fruit.

M - Prickly carbonation with a sharp acidity in the trail.

O - Oh my this is so good. Rich fruit, tart close, so drinkable. One of the better American Hefeweizens, for certain. Delicious.

A 12 fl oz bottle with no clear bottled on or best before date. Poured into a Reidel weizen glass.

Appearance: A hazy golden straw yellow with a nice big two finger fluffy white head that had excellent retention and left lots of lacing.

Aroma: Nice strong clove, banana, bubblegum and wheat.

Taste: Much like the aroma, wheat, clove, banana and bubblegum flavours that combine well.

Mouthfeel: Crisp, light bodied with high to moderate carbonation.

Overall: This was so tasty. It’s been a while since my last Hefeweizen and drinking Bubbler just makes me want to go out and buy more Hefe’s.

Slightly cloudy pale yellow with a ridiculously active and massive foamy white head settling convexly with spotty fuzzy lace and a large dome.

Smell is light ester and phenol, exhibiting apple and banana, nutmeg and clove. Bubbler is not too spicy, but spice is definitely present, paired with wheat and a light caramel note that hints at bananas fosters at times.

Taste is banana candy with rounding wheat to make it less like an artificial treat, with a light phenol touch, and a pear and apple finish.

Feel is slick, thin and almost watery, with very minimal carbonation on the tongue despite the massive head. Finish seems wet at first, yet, after the swallow, dries out.

Regrettably brief impression from a bottle:

Aroma is heavy on bubblegum phenol in addition to fresh aromatics of soft flaked wheat and 2-row barley, suggesting a soft mellow ale with nice flavour.

Taste and texture deliver, yielding a hefeweizen that goes heavy on the bubblegum phenol instead of the usual clove and orange peel yeast flavour to its benefit. Not banana heavy at all.

Refreshing, soft, light to medium-bodied, smooth, wet, and mellow. Not oily, gushed, hot, boozy, astringent, harsh, rough, or scratchy.

Drinkable and enjoyable for an American brewed hefeweizen, and easily up there with the most true to tradition I've tried from an American brewery. More solid work from New Glarus I'd happily buy again.

A really easy going weizen of the more the bubblegummy variety as opposed to clove and banana, although there is bit of banana on the palate. Juicy fruit gum aroma. Finish is a bit sweet, but the sweetness fades quickly, then leaves a sort of vanilla slickness with some dryness.

Damn, this has nearly all the flavor of the much stronger Dancing Man Wheat is a neat, sessionable package. It has the creamy, doughy banana foundation with light spice and a hint of orange. Very very drinkable. I wish I had more.

Pours a hazed gold with mutiple fingers of whippy pearl colored head. Average hed retention & lacing

S: Juicy fruit, a little breadyness

T: A little peppery yeast to go with the nose up front, plus dryness. Dryness, breadyness & green banana peels as this warms. Finishes dry, a liitle fruitty, & a little grassyness, plus more green banana peel

MF: Light/medium yeasty body, subtle carbonation

A nice, easy-drinking Hefe. Well done New Glarus!

This one was a little bit of a disappointment, but only because New Glarus sets the bar so high for themselves.

Pours like it's overcarbonated, rushing out of the bottle's neck as soon as the cap is popped. I figure maybe it was shook or something, so I wait to open another for the review. It does the same thing.

Months later, I get another sixer, and the first beer does the same thing yet again. So what I'm getting at is this is really, really aggressively fizzy, and pour don't look too good.

The aroma is nice: basically a very spicy hefe, with heavy white pepper and corriander against some generic fruitiness.

The aroma transfer over to the flavor, which makes it a little rough to drink. Not impossible--it's still okay--but the spice is strong, the body is thick, and unlike other very peppery hefes this one doesn't have nearly enough fruit or sweetness to balance things out.

Not horrible by any stretch, but not up to NG's usual standards.

This is not Son of Dancing Man Wheat (my vote for the greatest American hefe.) But, Bubbler can be considered his cousin.
Lots of similarities in the yeast offered in the Bubbler and, I presume, its barley/wheat bill.
And as refreshing and interesting as the Bubbler is, I got to the end and knew this was no Dancing Man.
Bubbler Looks, Smells and Tastes like all that stuff we associate with great hefes; but lacks the staying power of the greats. While the Feel is ultimately creamy, it starts carbonated and moderates nicely as the beer disappears. I also think Bubbler ends a bit too thin to be considered a great. (My humble guess is more yeast in the bottle helps.)
All said, I got a sixer and will enjoy and share them this summer.

9/20/17 Report on finishing the six-pack. Bubbler is better fresh and probably needs less bubbles for the yeasty, banana, et cetera to stand out. Reduced Taste by .25.

New Glarus does hefeweizens very well and this is no exception. The clove and banana flavors are there in just the right amounts. I wish I had gotten to drink this when more fresh.

A very enjoyable low alc. hefe. Aroma had more spice than typical clove or banana, but I liked it. Body was a little thinner than typical but fit the smaller size. Looked as it should with a cloudy yellow color and a big white (not quite billowy) head that did settle out some and not quite a sticky as expected.
Drank very easily and was a nice drink for lunch.
