Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels, then bottle fermented.

Pours a soft, soapy white head that has nice persistence. Sour and oak nose. Chill hazed, golden color. Starts with a sour, fruity, horsey flavor. The horse-like profile intensifies, then recedes to allow a soured maltiness to come through. The finish is citric sweet malt lingering over lactic acid.

This is quite good. It's a straightforward gueuze that is well balanced.

A: Pours a light caramel/dark golden color with a thin cap of white foam.
S: Super musty funk, greasy oak, slight oxidization, apple juice scents, cheesey.
T: Musty apple juice, cardboard, and cheese. The tartness is fruity, and I get some golden fruit juice flavors. Slight caramel, like a caramel apple. Musty oxidization lingers.
M: Sprtizy and fizzy carbonation, medium body, greasy with oak but slightly tannic.
O: Over the hill. This beer tasted tired. I'm sure it was much brighter fresh, but now its very muddled and oxidized. Still drinkable, however I wouldn't go out of my way to drink this again.

Have tried getting into sours and/or wild ales but just can't seem to develop a taste for them. This beer though was solid. It had a nice, funky sour taste that for a wild ale newbie like me, wasn't too overpowering.

very complex after the aging. Had this two months ago. Lots of funky oak charicteristics to it. Awesome sourness. I did not try when it first came out so I have nothing to compare the aging to, but it seems like it aged very well.
