Straw color, chill haze, a fine white rocky head and light effervescence. It has a sticky lacy and retains a fine layer after the head diminishes. The aroma is primarily of hops and some malt, but is also tart with a, bready background. The flavor has a slight sweet start with a tart yet spicy middle and a crisp finish. Mouthfeel is light/medium bodied with an astringent finish.

Poured 33cl bottle w freshness date into wine glass. Showed a high effervescence, retention was pretty good though not amazing, left a really nice lace. Colour is a light straw gold.

Nose has some clay-ey yeast up front. Prominent maltiness and hops. Quite crisp with a solid mineral edge to it.

Taste has a quite mineral start, then crisp green apples, with a bit of tastness, plenty of yeast which dominates. Malt provides a good balance, and all together this shows quite a good bit of flavour Toward the end some drying bitterness and it finishes crisp and again mineral esters.

Mouthfeel has a high carbonation, moderate bite and body. Quite good, bit of sharpness, but refreshing, leaves a tingling sensation.

Enjoyable ale, it has a couple rough spots, but it has a really good complexity and flavour. Carbonation could be toned down, but flavour of the beer was quite impressive, try it out.

Rare color for a beer, light gold milky. Lots of thick snow white head with good retention and leaving laces.
Nice aroma with predominant Belgian yeast.
Slightly different flavor from what I have tasted so far in beers, though not awkward. Very pleasant and refreshing. Quite citric but not aggressive, hints of lactose, cloves, lemon, bananas, oranges and green apples. All that but very subtle, yeast predominates here as well. Dry aftertaste and a bit acid finishing.
Light body with good carbonation, almost effervescent in touch with your tongue.
Although it is a mild beer (relatively to the Dubbels and Tripels) it has its own personality. Drinkability at its best, I could drink this all day. Complex but not bold. Higly recomendable.

LOOK: Hazed pale straw

SMELL: Ripe plums, chalky yeast, dried grass, faint Band-Aid, honeydew melon

TASTE: Smooth, lighter body, hay, fresh-baked crackers, orange pith, light white peppercorn, vegetal, green plantains, dusty clove, medicinal herb, browned apple, dry finish

There’s Belgian Dubbel and Tripel ales, and then there’s Stimulo, better known as an Abbey Single. Typically, that means a smaller beer; lower in alcohol and pale in color. And that’s what we have here. A very drinkable and flavorful beer that’s a nod to what the monks might drink on a regular basis. Drink like a monk? Sure, why not.

Presentation: 11.2oz euro brown bottle. Unfiltered and bottle conditioned. A rather sad looking monk peers at you wishing he could be drinking a dobbel or trippel.

Appearance: Clear straw with a wispy white lace and spritzy carbonation.

Smell: Apple cider and grass aromas, with mild hints of sweetness -- almost honey-like.

Taste: Initially this brew tastes cidery, with a sour dough flavour in the background. A lingering tartness/grassy and dry grain follows. Pouring any of the settled yeast out of the bottle will produce a slightly nutty flavour.

Notes: Funky Belgian ale lovers, this one is for you.

10/14/01 Notes:

An interesting Abdijbieren (abbey beer). Golden/blonde in colour with a sticky white lace. Slightly malty and sour in the nose. Malt dryness, some sweetness then more dry and sour/bitterness. Overall, not too bad and worth a try for the exploring palate.

Persistent fluffy white head, it was still in my glass this morning. I wasn't expecting this beer to be as tart/sour as it was. Pleasant surprise. More bitter than most Belgian whites. Finished dry, quick and a little thin. Took on chaulky character after the addition of yeast. Overall it was extremely interesting.

The slightly hazy pale golden hue is topped by an impressive, thick, fluffy and persistent head-- very appetizing in appearance. Tart fruity esters w/ light citrus notes in aroma, followed by a subdued mustiness & just a hint of phenol. Lightly bodied w/ a crisp & pleasant mouthfeel. Tart upfront in flavor, but a mellow & agreeable sweetness follows. Yeast derived flavors are mild, but citric esters are perceptible and well blended into the flavor profile. Hop bitterness is very light, but emerges in the surprisingly dry & clean finish. The light, yet complex flavor lends Witkap Pater Singel superlative drinkability. It's a Belgian ale I could drink all day.

Poured into tulip glass. Maybe a little warm.
Huge, full quite white head. Very clear very pale yellow. Looks good and inviting. Dripping hanging lacing.
Aroma is quite malt based of pale malt that surrounds a yeasty spiciness. Nice. Reasonably simple but pleasant indeed.
Drinks light in body, like a pils, up front with an emphasis on the pale malt flavors. Then then the yeast, spice and alcohol show forth creating what seems like to distinct drinks (in one bottle - how cool). Adequate drying makes it easy to drink, yet still leaves a mild but pleasant aftertaste.
Drinks very simply and easily. Flavorful yet light. Well done. Wish I had another.

Hazy gold. Aroma is light and doughy accompanied by a light fruity quality. Flavors consist of a pleasant balance of pear, pineapple and tart lemon. Mouthfeel is light-medium, carbonation – effervescent. Alcohol is subtle and soft, enhancing a somewhat spicy undertone. A unique and drinkable brew. Paired well with a sharp, aged provolone. Excellent.

11.2 fl oz. bottle, with no apparent bottled on date present. Acquired this oddity on sale at the local Binny's. My first encounter with this brewery, and my first encounter with what describes itself as a 'singel' abbey ale. Unfiltered & bottle conditioned. I have no idea what to expect!

Poured into a clear balloon snifter.

A - Gusherrrr! My second encounter with a gusher. Poured two fingers of fluffly bubbly white head on top of a burnt orange yellow colored body with some dark flecks of sediment. Not remarkable, but it looks pretty nice when it comes down to it.

S - Smell is of musty yeast, green apples, some vinegar acidity, some earthy woody caramel malt, a bit soapy. Smells pretty nice.

T - Taste is of spritzy yeast, earthiness, wheat, husky grains, corn, sour green apple, lemongrass. This definitely surprised me.

M - Feel is crisp and clean, with mild grain and tartness on the finish. Very nice.

Overall, I was very pleasantly surprised. I would definitely be interested in having more of this, and this surely has me interested to try more of the style. Recommended.

This beer is almost clear and golden. A skimming of a head is present. Frothy edging however. Aroma is fruity, musty and heavily cidery. Huge apple cider nose. Taste seems a little stale. Sour apple and vinegar come to mind. Not very drinkable. I wouldn't go with this one again.

Witkap Pater Singel is a beer I had never even heard of before today, from a brewery I had never even heard of before today. This is a rare occurance for me, so I had to try it. It pours a cloudy golden color with a huge head that quickly settles to an island of foam in the middle of my snifter. Aroma is slightly hoppy and spicy. Taste is wheaty, with some spices (coriander? orange peel?) and a small amount of hops. Light mouthfeel, sparkling carbonation with a very dry finish.

This beer is kind of a poor man's Duvel - less hoppy, less alcoholic, less head, but more expensive. So I guess it isn't really a poor man's Duvel. A good beer nonetheless, and worth a try.
