A custom blend of the beers of Bear Republic, Cuvee de Bubba is refermented in oak barrels using only the wild microflora and fauna native to the Alexander Valley. A bouquet of stone fruits with a complex flavor profile of malt, tobacco, and cherry pie sourness.

06/12/14 – From a 4oz taster

A: Dark golden amber with some auburn hues and a real pure clarity to it. A thin film of meek khaki froth forms over and is short-lived with only a few light etchings of lace left to the glass. As expected for a barrel aged wild ale with a surprising conditioned quality to it.

S: Smells very floral like lavender blossoms with a touch of dark soured fruits and some mild vinegar qualities. The nose has a big honey like sweetness that was a little unexpected. Not bad but a bit sweet and fruit forwardSeems like some nice local ingredients have been incorporated here

T: Mixed dark berries give a light to mild amount of tartness to the brew along with some apple cider vinegar and lemon. Flavors segue into a big floral honey like sweetness. This is so much like a mead in some ways. There is little to no perceived bitterness with some and the alcohol is kept really well hidden throughout. I get some some woodsy oak tannins and a dusty mineral character towards the finish. Detecting a miniscule amount of acetone there too but it is not enough to be reproachful. Interesting brew and fairly unique.

M: The mouth feel is medium to light and a bit watered down. There is mellow amount of tart pucker to it with a touch of drying at the finish. Clean retreat but lands mostly on the watery thin side.

D: This was an okay wild and nice to try but far from being a favorite. There is a lot of berry tartness and florals but not much funk at all with a massive amount of honey like sweetness. A lot of components to this one, some nicer than others, but just didn’t wow me in the end.

From 02/27/14 notes. Had on tap at Beer Authority in NYC after their BR event. 14 oz. pour in a stange type glass.

a - Pours a deep reddish color with one inch of off white head and high carbonation evident.

s - Smells sour dark fruits, vinegar, raspberries, sour cherries, oak, light funk, citrus, and earthy notes. Light floral hops. Awesome smell, smells very sour and lots of dark fruits.

t - Tastes of sweet and sour cherries and other dark fruits, citrus hops, oak, light vinegar, earthy notes, grapefruit, fruity malts. Taste is good but less sour than the nose; little bit sweeter.

m - Medium body and moderate carbonation. Lightly acedic but not too much.

o - Overall a really nice wild ale from BR. Not the sourest taste is the world but that is fine, it smells great and tastes very good. Worth checking out.

A: Pours a light copper with a small light white head.

S: Tart lemon, funky Belgian yeast and wheat in the nose.

T: Tart lemon again, maybe some orange, citrus rind, funky Belgian yeast.

M: Medium bodied with medium smoothness.

O: Pretty good, not the best wild ale out there, but worth a try if you can find it (I'm assuming it's tap-only, brewery-only).
