Golden blond ale brewed with our own hops and fermented with our Morpheus house yeast. Aged in wooden Bordeaux red wine barrels for eight months.

Look: It pours amber with a little bit of haze. It has a white head with low head retention.

Smell: It is quite sour with grape like elements.

Taste: It has some grape flavors with wine elements. There are some light leather and barnyard elements. There is a bit of sweetness in spite of the dominant tartness.

Feel: It has a medium body with a dry finish.

Overall, it's quite sour with mostly white and red grape flavors.

Pours a deep amber coloration with a tiny, fizzy, quickly vanishing head. Smells of citrus, red berries, white grape, with some funk and lighter notes of tannins and oak. Taste starts out with zesty citrus notes of grapefruit and orange and tart green apple, with lighter notes of red berries: raspberry, redcurrant, white grape and peach. Then a medium, moldy and slightly funky sourness with a light blue cheese note creeps in, along with lighter notes of tannins and oak. Some light, spicy esters, a mild graininess and a certain floral note are present as well. Finishes with a dry, medium sourness and some funk lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.

This somewhat reminds me of Cuvée Sofie, but is MUCH better balanced in my opinion, which is why I enjoyed it a lot more. Much less sweet and vinous, with stronger citrus notes and funk. Also, less boozy, with a nice, dry finish.

I found and purchased a bottle of Wild West about a year ago, not even knowing what it was. I was on a quest at the time to drink all of the beers (yes, all of them). I thank myself in hindsight for being so naive and open to new experiences.

Wild West is a barrel-aged sour (or wild, whatever suits your fancy) - a style which I've been enjoying tremendously lately. WW pours mostly a clear, light brown with very little evidence of head or carbonation at all. It smells sour with nice wine notes as soon as the bottle is opened. As noted in appearance, the carbonation is practically non-existent. I liked this, actually, but would have preferred just a slight bit of head and carb - I think it would have accentuated the richness of the mouth feel.

I had hoped for a more pronounced sourness, but it's quite good all the same - a very pleasant surprised.

This is the first beer I've had from this guys and it seems I'm gonna like a lot their beers.
It pours a still slightly hazy amber/straw colour without anyhead.
The aroma of the beer is quite great. Very balanced and complex. Sour, musky, leathery, floral, caramelized grainy, funky in any way it almost reminds me of some pâté de campagne.
Lighter taste but still complex. Floral, grainy, very sour and funky, citrusy. It has some lambic attributes. The red wine barrel aging bring some tannic notes apart from the musky notes.
The mouthfeel is semi dry to dry and has a champagne-like carbonation.

An "American Wild Ale" brewed in Belgium! Lol.

A very nice amber with big golden highlights. Slight haze with a high standing white foam cap. This bottle has plenty of life. When it recedes, intricate lace hangs all over the glass and a thin covering at all times.

The aroma is classic wild ale, earthy, sour fruits, tangy wheat, and Funky wild yeast. Very tangy and fruity aroma with a wet-earth, musty funk way down. Most likely from the "Morpheus" yeast strain, which I find to be unique, which adds bonus points. I feel the strange, unique qualities of the yeast strain and wild critters is what sets these ale's apart from the field. As the liquid warms, the funk goes up, with more cheesy effects and more sour green apples on the nose.

The flavor starts out with a huge, sour, rangy and metallic yeast punch. The Morpheus yeast is very wild tasting, bring me back to my first wild ale's, way back in 2008 with Russian Rivers most excellent Supplication and Beatification. Those packed a seriously, sour bite...and so does this! The sour taste of lactic acid from the yeast strain goes a long way, lemmon, zesty, earthy, and mild sour wild fruits. A hint of of cask, woody flavor's and red wine cone from the Bordeaux barrels. A nice, added depth of flavor. A light hop flavor brings some dry earth and green leafy effects.

The mouthfeel is crispy and sharp, turns smooth and full quickly, effervescent and then dry. Spot on.

If you like very sour and very wild yeast flavor's.(like I do)...this one's for you!

Pours flat, with almost no head. The body itself is a slightly murky copper color. Not a good look.

There are some interesting aromas coming through...not all of them good. There are touches of lime, lemon, cherry, peach, and Greek yogurt, but some additional touches of sulfur and cardboard that spoil things. As it opens up - or I get used to the odd funk, one of those two - the bad notes disappear and the nuanced lacto comes to the forefront. Touches of oak barrel also shows up. It becomes quite appealing after sitting for a while, but it REALLY needs to sit for a while before that occurs.

The flavor here is all about the lacto. Notes of oak, vanilla, and red wine open it up. The lacto shows nice nuance around the middle with Greek yogurt, cherry, and lemon. However, it goes a little overboard near the finish, injecting some spoiled milk, vinegar, and eggs (I won't say rotten eggs, though) into the mix. The aftertaste is a bit cardboardy, too. This one (though complex) seems excessively weird and scattershot - some flavors work, others don't.

Yep, this one is flat like a straight lambic. Despite the extremely timid carbonation, it finishes dry due to the intense sourness and parching oak tannins. Come to think of it, the flat texture is almost necessary in order to keep it from being any sharper or firmer in body than it already is. It's even dry to the point of being harsh.

An odd beer. Nor do I find it particularly great. It's interesting in that many different flavors are occurring, but at no point does anything seem cohesive or balanced. If I were to try it again, I'd probably look for a younger bottle.
